Salmon and kumara patties

Ingredients

4 portion(s)

  • 550 g Kumara (sweet potato) peeled and chopped, also added some chat potatoes to make up the weight
  • 415 g canned red salmon
  • 1/4 chives fresh, cup
  • 1/2 packaged dried breadcrumbs, cup
  • 1/4 vegetable oil, cup
  • 1/2 lemon, juiced
  • freshly ground pepper, to taste
  • Mayoonaise or Tartare Sauce, to serve

Recipe's preparation

  1. Process chives on speed 7 for 15 seconds. Remove from TM bowl and set aside.

  2. Placed cubed potato in simmer basket with 600ml of boiling water and cook on varoma temperature for 14 minutes on reverse, soft speed.

  3. Remove simmer basket and place potatoes in a bowl to cool slightly.

  4. Place salmon, potato, chives, pepper and lemon juice in TM bowl and mix for 25 seconds on speed 8 until combined.  Then use the spatula to make sure well combined.

  5. Place mixture in bowl.  Shape salmon mixture into 12 equal patties.  Press into breadcrumbs to coat.  Chill patties for 20 minutes.

  6. Heat oil in a frying pan over moderately high heat.  Cook patties in batches, for 2 minutes or until browned.  Transfer patties to serving plates.  Cover to keep warm.  Serve with tartare sauce and salad.

    Mixture was very soft, hard to mould. Would probably make without TM next time.
