Ingredients

Ravioli dough

  • 3 eggs
  • 300 g bakers flour or plain flour
  • 1 tbsp extra virgin olive oil

Ravioli filling

  • 1 Shallot or 1/4 onion
  • 1 clove garlic
  • 1/2 bunch parsley
  • 1 Lemon zest from one lemon
  • 1 juice of 1 lemon
  • 1 egg white
  • 1 Handful of spinach
  • 220 g Prawns

Silky tomato passata sauce

  • 2 shallots, peeled
  • 2 cloves garlic
  • 1 --- small chilli
  • 2 bottles Passata, 600g
  • 1/2 bunch parsley
  • 50 g olive oil
  • 50 g vodka
  • 50 g champagne
  • 2 tbsp cream
  • 1/2 bunch baby spinach
  • 1 tsp Sugar (optional)
  • salt and pepper, to taste

Recipe's preparation

    Fresh ravioli pasta with tomato passata sauce
  1. Place alI dough ingredients into TM bowl.

    Set dial to closed lid position and knead for 2 minutes on Interval speed. Dough mode"Dough mode"  

    Tip dough out onto a floured board and knead lightly into a ball and wrap  with glad wrap and allow to rest while you make the filling in thermomix and tomato passata sauce.

  2. For ravioli filling, add shallot, garlic, parsley and lemon zest to TM bowl and chop for 10 seconds on speed 7.  Add lemon juice, egg white and spinach. Blend again on speed 7 for 10 seconds.  Add prawns and 2 Tablespoons of cream (optional) and use turbo button to pulse until all combined and prawns are minced nicely. Add salt and pepper to taste. I also add a few sprinkles of dried chilli at this stage also. Put filling aside while you make the silky tomato passata sauce.

  3. To make the Silky Tomato Passata Sauce,  add shallots, garlic and chilli and parsley into TM bowl and chop 6 seconds on speed 7. 

    Scrape down sides of bowl with spatula, add oil and sauté for 2 minutes at 100oC on speed 1.

    Add tomato passata, vodka and champagne and cook for 30 minutes at 100oC on reverse Counter-clockwise operation"Counter-clockwise operation" and speed soft Gentle stir setting"Gentle stir setting" .

    Add cream, baby spinach, sugar (optional) and salt and pepper to taste and cook for a further 5 minutes. This is then ready to serve over your ravioli.

  4. To make ravioli, pass dough through a pasta maker until as thin as possible, place a teaspoon of filling  on the pasta , I also top the filling with 2 small piece of chunkier prawn and top with another piece pasta and press edges together to create a parcel. Continue with remainder of filling and pasta dough. 

    Bring a large pot of water to the boil and salt water. Add ravioli and cook for 4 minutes or until ready. Fresh pasta cooks quickly compared to dried pasta.

    Place 4 or 5 pieces of ravioli on a plate each and top with silky tomato passata sauce.

    Enjoy!   You will never buy ravioli already made from the supermarket again!! It is delicious and everyone will think you are amazing!

    This recipe is so delicious and not difficult. The sauce is just gorgeous and could be used with other pasta dishes. I didn't add the chilli as my husband is 'boring' when it comes to chilli but it was still tasty without it. I halved the recipe and it worked well. Only mistake I made was I rolled the pasta a bit too thin (setting 8 on my machine) and a few of the ravioli opened up but it didn't matter much once the sauce went on! Nothing like fresh pasta and the dough recipe was very good. Thanks I will definately make this again.
