Thai Style Tuna Patties

  • 425g can tin of tuna in springwater, x 2 cans
  • 400g can cannellini beans, dried
  • 15 g corn flour or arrowroot powder
  • 2 tablespoons fish sauce
  • 3 eggs
  • 50 g Thai red curry paste
  • 1 lime, juice & zest
  • handful fresh coriander
  • 2 spring onions
  • Coconut oil or olive oil to cook

Recipe's preparation

    Thai Style Tuna Patties
  1. *  Place coriander & spring onions in TM bowl and chop 3 seconds on speed 8.

    *   Add tuna, canelloni beans and thai red curry paste. Blend 5 seconds speed 6.

    *  Add fish sauce, eggs, lime juice & zest, and coconut flour. Mix 20 seconds speed 4.

    *  Heat oil in a frypan.  Drop tablespoons of fish mix cakes into the hot pan and cook until golden.

    The flavour was nice but the mixture is very mashed up.  I liked using the canneloni beans instead of potato but would next time mix the tuna and other bits through with a spatula.  I also went off previous comments and used 2 eggs.

    Tasted great. Kids loved. Is it 1 or 2 cans of tuna? I drained the springwater (doesnt say to but did anyway) but mixture was a bit sloppy (but i used only 1 tin of tuna. Im sure 2 tins would make a denser mix, but that would have been way too many patties for our family of 4). Thanks for the recipe.

    I used coconut flour in mine.  Was quite a big quantity in the mixing bowl, so didn't blend/chop as well as I think it should have.  I am wondering if half quantities (with 2 eggs rather than 1.5) might work.  Will try that next time.

    Definitely great flavour though & love that it uses beans rather than breadcrumbs/potato.  I used the 50g of red curry paste - wasn't spicy at all.

    Is it supposed to be cornflour or coconut flour in the recipe? the ingrediets say corn, the method says coconut.

    YUM YUM YUM.  I just made this for dinner tonight and left out the coriander (cause I don't like it) and replaced the canelloni beans with a four bean mix I already had in the cupboard and YUM YUM YUM.  Thanks tmrc_emoticons.-)
