Ingredients

Bavarian Meat loaf (Leberkase)

  • 500 grams Beef mince
  • 500 grams pork mince
  • 170 grams ice cubes
  • 50 grams juice from a can of beetroot
  • 50 grams iced water
  • 1/2 tbsp white pepper
  • 1 tsp salt
  • 1/2 tbsp ground nutmeg
  • 2 tsp marjoram
  • 1/4 teaspoon allspice
  • 1.5 tsp ground paprika
  • 1.5 tsp baking powder

Recipe's preparation

    Prep
  1. 1. Combine all the spices in a small bowl and set aside.

    2. Add pork, beef and ice to the Closed lid.

    3. Grind 10/ 1-2 minutes, until the ice has dissolved and its a fine paste. It will be really noisy..!!

    3. Add water, beetroot juice and spices, sp 10/ 1 minute.

    4. Spread into a greased loaf pan.

    5. Mark into a diamond pattern on the surface if desired.

    6. Bake for 1 hour, or unil cooked when tested.

    7. Slice and serve or leave in the pan to cool.

Tip

The tip to this traditional meatloaf is to have all the meat/liquid ingredients really cold. You can even partially freeze the meat to begin with.

Its a very fine textured meatloaf as you will see from the paste like mixture it produces.

There are so many ways to eat this dish.

You can slice and serve it with your favourite sides straight away.

Or you can leave it to cool in the pan, slice it and pan fry it to crisp it up. Top with a slice of cheese.

Slice it thin when cold and serve it on a sandwich with cheese and tomato.

Have it for breakfast, panfried with a side of scrambled eggs (as in the photo).

So many choices...!

And it freezes well to boot...

    I tried this recipe because I like Leberkäse, but this doesn't turns out like leberkäse I had in Germany. But still taste not bad. My hubby is german and he approved so I'm going to make it again in future. (Btw, I bake it in oven at 180 degree. The recipe didn't mention the temperature). Thank you for the recipe.
