Chicken and Black Bean

Black Bean Sauce

  • 120 gram water
  • 20 gram shaoxing wine, or sherry
  • 50 gram soy sauce
  • 50 gram oyster sauce
  • 1 tsp brown sugar
  • 10 gram cornflour, or 1 tbsp
  • 1/2 tsp dried chilli flakes
  • 4 tbsp Tinned Black Beans

Chicken and Black Bean

  • 550 gram chicken breasts
  • 1 cm fresh ginger
  • 2 cloves garlic
  • 2 spring onions
  • 1 onion cut into 8 wedges
  • 10 gram sesame oil
  • 110 gram Swiss Brown Mushrooms
  • 45 gram red capsicum
  • 80 gram broccoli
  • 50 gram Sugar snap peas
  • 100 gram dried egg noodles

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Black Bean Sauce
  1. Add all ingredients in TM bowl - EXCEPT BLACK BEANS - and mix for 10 seconds on speed 3.  Set aside and add black beans into sauce.

    Rinse and dry TM bowl.

  2. Chicken and Black Bean
  3. Cut chicken into large pieces, place in a ceramic bowl and add 3 tbsp black bean sauce to marinate. Set aside.

    Add ginger, garlic and spring onions to TM bowl and chop for 3 seconds on speed 6.  Add onion and seasame oil and cook for 10 minutes on 100 Counter-clockwise operation speed 1.

    Stir black bean sauce then add to onion mixture and cook for 5 minutes on 100 Counter-clockwise operation speed 1.  Set aside in a small thermoserver or jug to keep warm.

    Rinse TM bowl and place 800g water in TM bowl to steam.

    Place chicken in varoma dish and cook for 12 minutes on Varoma temperature on speed 2.

    While chicken is cooking prep the veggies and place on the varoma tray. Set aside. Place dried egg noodles in TM basket and set aside.

    When 12 minutes is gone, turn the chicken, then add the TM basket into the TM jug, replace the lid, and add the varoma tray wtih veggies on top of the chicken and cook for 8 minutes on varoma temperature on speed 3.

    Place chicken, veggies and rinsed noodles into a thermoserver and pour over the black bean sauce.  Stir gently to combine.

    Leave it to rest for a few minutes for the flavours to combine then serve.

Tip

You can cook rice at the same time as cooking chicken if you don't want noodles.

Use whatever veggies you would like or have.

The sauce can be made a few days before.  Just stir it before you use.
