Chicken and Cashews - Thai Style

Ingredients

4 portion(s)

  • 500 grams chicken breast, Cubed 2cm
  • 1 Brown Onion - Large, Cut into eighths
  • 2 cloves garlic
  • 30 grams olive oil
  • 3 teaspoons Chilli Paste with Soya Bean Oil, Heaped spoons
  • 100 grams oyster sauce
  • 50 grams light soy sauce
  • 50 grams raw sugar
  • 100 grams Roasted Cashews
  • 1 shallots, To Garnish

Recipe's preparation

  1. Place garlic into TM bowl and chop 3 sec/ Speed 7
  2. Insert Butterfly, than add oil and saute 100 deg/ 2 mins/ Speed 2
  3. Add chicken and cook Varoma/ Counter-clockwise operation/ 2 min/ Gentle stir setting
  4. Add chilli paste and cook Varoma/ Counter-clockwise operation/ 2 min/ Gentle stir setting
  5. Add oyster sauce, light soy sauce, raw sugar and onion cook Varoma/ Counter-clockwise operation/ 5 min/ Gentle stir setting
  6. Add roasted cashews and cook Varoma/ Counter-clockwise operation/ 1 min/ Gentle stir setting
  7. Serve with rice and garnish with chopped shallots

Tip

The chilli paste I use is available from Asian Shops - Chilli Paste with Soya Bean Oil - Pantai Brand (see 2nd photo)

 

We like a lot of sauce to go with rice however if you like less then reduce the oyster sauce and light soy sauce accordingly

 

You can use sweet chill sauce for this recipe however it does change the flavour and will make it spicy compared to the chilli paste with soya bean oil

Also feel free to add vegetables to this dish.

    A lovely recipe, however I don’t eat chili, so i left it out. I didn’t put as much as the recommended amount of sugar, only 35g, so the sauce was quite overpowering. Not sure if it was the Oyster Sauce, or light Soy Sauce, or both. Can somebody suggest what I can do so the sauce is not so overpowering, as I think this is such a wonderful easy recipe.

    Thanks for the recipe. I'll be cooking it again for sure. I love chilli but I'll be feeding this to my 2 year old so I thought I'd lessen the chilli to 2 tsp. Still DELICIOUS for those that might be nervous with chilli.

    MissTang: soy bean oil is not a separate ingredient - it’s in the chilli paste brand recommended for recipe. The brand used is sometimes difficult to find so you can try any chilli paste/jam you can get hold off. Flavour might be altered but it’s still good.

    This was brilliant!! I did tweak it. 70gms of oyster sauce, 40gms of soy sauce, 20gms of coconut sugar and I couldnt get the chilli paste in the pictures above so I used Ayams Thai Chilli jam - a teaspoon. I cooked for 7 minutes at step 5 and 4 minutes at step 6. Just sensational the house smells amazing!! Miss 9 demolished it and she's a fusspot - she left the cashews.

    If you were so inclined you could add some thinly sliced zucchini and capsicum, which I may do next time or steam some asian greens while its cooking.

    Delicious, family ate it all up. Took on other suggestions:
    - reduced Oyster to 80g
    - soy sauce to 45
    - a dollop of ginger paste
    - XO sauce instead of chilli paste
    - no sugar
    - Added capsicum and blanched broccoli.
    - Cooked 7 mins longer

    One of my favourite dishes to order out and this lived up to expectations. I did use coconut sugar and reduced it to 20g. I made sauce in the thermomix and then cooked chicken and veggies in wok. Next time I would reduce the soy and oyster sauces and increase chicken. Would be a great recipe for feeding a crowd. Thanks.

    Amazing authentic Thai taste. I used sweet chilli sauce and added the chicken after the sauce cooked and the chicken still shredded a bit. A hit with the fussy husband. Will be our go to.

    The family (well 4 out of 5) loved it. Disapointed that the chicken shreaded, wish the notes included to use the butterfly up a little higher, still delish. Just not insta worthy hahah.
    Have added a note to use the butterfly next time.

    Made my own chilli paste 2 teaspoons of tomato ketchup, 1 teaspoon of chilli flakes and 2 dashes of hot sauce.

    Will be making this more regularly!!!

    I made this according to the recipe except I used the Chill Jam and was really nice. The only thing was it tasted very salty. Has anyone reduced the soy sauce and still tasted ok.

    YUM. Made a slightly "cleaner" verson by substituting the soy with Tamari, used coconut sugar instead of raw sugar, Sriracha for the chilli sauce and added a long red chilli. I also used chicken thigh and some steamed veges all served on brown rice. Delish, will definitely make again.

    This recipe was amazing. I used chicken thigh. I cut it into 2cm chuncks and it stayed whole and tender in the TM. I added capsicum, carrot and tin baby corn with the 5 minute cook. I added the onion in at the same time as the garlic. I cut the sugar to 20 gms and only had sweet chilli sauce, so used it. With all these adjustments it was amazing, but I was working with what I had. I imagine it would be amazing if following the recipe exactly also. Thanks for this recipe. I can't wait till I get to cook it for others!!!

    Really tasty, but I was disappointed that the chicken shredded badly despite following the recipe. The texture of the chicken was like tinned tuna, so it was quite off putting. Next time I'll make sure I use the butterfly. I wanted to increase the veggie count, so I added red capsicum and snow peas with the onion. I couldn't find the suggested chilli paste, so used 1 heaped teaspoon of Ayam laksa paste. I'll definitely make it again, as the flavours are nice.

    It was a hit in our house. After reading the comments, I used the Ayam brand Thai chilli jam paste - only 2 tspn. It was delicious, a little sweet for my taste, so I'll reduce the sugar next time. But if everyone in the family enjoys it, it's a winner in my books. Definitely be making this again...

    I reduced Oyster to 80g - soy sauce to 45 - no sugar and subtituded the curry paste for sweet chilli sauce.
    Also added ginger with garlic at the start and sliced carrot, capsicum and mushrooms!

    Delish!

    It was pretty quick to whip up, I started the rice in rice cooker first then followed this recipe. Once finished I transferred the bowl contents to another dish and covered in foil. If I had a thermo server I would use that. Then I did NOT wash the bowl and just added apx 1L water then steamed brocolli and beans in the varoma for 15-18min on speed 4.

    I used chicken thigh, no butterfly, and ensured I had reverse and speed soft enabled each time. my chicken did not shred.

    I Couldn't find the exact chilli paste used however after reading far into the comment suggestions I used Ayam brand Thai chilli jam paste and it is definitely flavourful and mild, even my 4yo daughter who hates spicy food ate all of her dinner up and thanked me for it tmrc_emoticons.-D[/size]

    Made this for myself and a girlfriend and it was AMAZING!! I used thigh and cut into thirds, used the butterfly and cooked for about 5 mins longer, it was perfect!
