Ingredients

  • 500 grams chicken breast, Cubed 2cm
  • 1 Brown Onion - Large, Cut into eighths
  • 2 cloves garlic
  • 30 grams olive oil
  • 3 teaspoons Chilli Paste with Soya Bean Oil, Heaped spoons
  • 100 grams oyster sauce
  • 50 grams light soy sauce
  • 50 grams raw sugar
  • 100 grams Roasted Cashews
  • 1 shallots, To Garnish

Recipe's preparation

  1. Place garlic into TM bowl and chop 3 sec/ Speed 7
  2. Insert Butterfly, than add oil and saute 100 deg/ 2 mins/ Speed 2
  3. Add chicken and cook Varoma/ Counter-clockwise operation"Counter-clockwise operation" / 2 min/ Gentle stir setting"Gentle stir setting"
  4. Add chilli paste and cook Varoma/ Counter-clockwise operation"Counter-clockwise operation" / 2 min/ Gentle stir setting"Gentle stir setting"
  5. Add oyster sauce, light soy sauce, raw sugar and onion cook Varoma/ Counter-clockwise operation"Counter-clockwise operation" / 5 min/ Gentle stir setting"Gentle stir setting"
  6. Add roasted cashews and cook Varoma/ Counter-clockwise operation"Counter-clockwise operation" / 1 min/ Gentle stir setting"Gentle stir setting"
  7. Serve with rice and garnish with chopped shallots

Tip

The chilli paste I use is available from Asian Shops - Chilli Paste with Soya Bean Oil - Pantai Brand (see 2nd photo)

 

We like a lot of sauce to go with rice however if you like less then reduce the oyster sauce and light soy sauce accordingly

 

You can use sweet chill sauce for this recipe however it does change the flavour and will make it spicy compared to the chilli paste with soya bean oil

Also feel free to add vegetables to this dish.

    Added veg into bowl at same time as chicken (carrot, zucchini, mushrooms, capsicum, celery)

    The flavours are amazing but I did have to add at least 10 mins cooking time for the chickenz. I broke it all up (it had clumped together) and put it back in at the end as it was all raw still. Not sure what I did wrong?!

    Absolutely delicious. Hand down best chicken cashew I've had outside of Thailand.


    I also added fresh chilli & ginger with the garlic, then carrot, celery, capsicum & broccoli with the onion.

    Amazing!!! So much flavour!!! Added more garlic, a little less oyster sauce and streamed broccoli in the Verona and added into the bowl on the last step. So impressed, thanks for sharing!!!!

    I made this last night as I think the chicken and cashew nut on cookidoo lacks flavour.

    Highly recommend this recipe, it was delicious! Tastes so much like our local Thai Restaurant.
