Chicken, bacon & vegetable risotto

  • 1 small skinless chicken breast - cubed
  • 1 onion
  • 200 g pumpkin - diced
  • 100 g capcisum
  • 150 g bacon
  • 100 g mushrooms
  • 370 g arborio rice
  • 3 tablespoon TMX vegetable stock concentrate
  • 80 g white wine
  • 800 g water
  • 2 handfuls of baby spinach
  • 1 clove garlic

Recipe's preparation

  1. Roughly chop capsicum and chop on sp7 for 3s.  Put aside.

  2. Put garlic and a quartered onion into tmx and chop on sp4 for 3s. 

     

    Add 50g EVOO and saute on 100C for 2mins on Gentle stir setting

    If you don't want crispy bacon (like I do, in the frypan) then dice that

    and add it here to saute with the onion and garlic..

  3. Dice chicken and put into tmx. 

    Add 370g arborio rice and 80g of white wine and butterfly

    and cook for 2mins on Gentle stir setting on Counter-clockwise operationat 100c.

     

    You can skip the wine and use water here instead.

  4. Add 3 tablespoons of tmx vegetable stock and the 200g of diced pumpkin

    and capsicum and approx 800g of water...

    Whatever amount takes you to the max liquid line on the inside of the jug. 

    Plus mushrooms if you wish, see below note...

    Cook for 20mins at 100c on Counter-clockwise operation on Gentle stir setting.

    Can cook 3-5mins longer if the pumpkin needs it.

     

    If you want mushrooms you can add them (100g) in now with the stock

    and pumpkin, or just add them into the thermoserver at the end as they

    will cook in the 10-15mins you leave the risotto in there to settle and thicken.

  5. Whilst you meal is cooking in the thermoserver if you did not

    add the bacon into it already then dice it up and cook in a fry pan

    a few minutes before the tmx is done. 

     

    Add 2 handfuls of baby spinach leaves in to the bottom of your thermoserver

    with the crispy bacon on top (if it's not in the tmx) and then add risotto

    from tmx on top of it to sit in here (lid on) for 10-15mins to thicken up.

  6. Serve with parmesan cheese.  

    If you don't have some on hand already it's approx 60g.

    Terrible fail with this recipe. Followed the directions to the letter. The bottom half was glug and the top half raw. Thick burnt ring on the base that took forever to clean off. Sorry, won't be using this recipe again.

    Hi, yes sorry I didn't realise I forgot that symbal, will update the recipe.  100c for 20mins on Gentle stir setting.

    Sorry if you found it a bit bland.  I'm not a huge spicey/hot kind of cook, esp when cooking this meal for my 2yr old also.  Maybe add in more garlic or chilli or something?
