Chicken, Mushroom & Sweet Potato Bake



200 g

Mushroom Soup

  • 1 brown onion
  • 3 cloves garlic
  • 25 g olive oil
  • 200 g Swiss Brown Mushrooms
  • 400 g button mushrooms
  • 2 tablespoons chicken stock paste, (Quirky Cooking link below)
  • .6 litre pure cream, (600ml)

Potato Bake

  • 150-200 g Tasty cheese
  • 1200 g sweet potato
  • 1/2 Mushroom Soup, (reserve 1/2 for next time!)
  • 500-600 g chicken breast

Recipe's preparation

    Mushroom Soup
  1. Peel Onion & Garlic, chop 3 seconds / Speed 5;
  2. Saute Onion & Garlic, 3 mins / Varoma / Speed 1;
  3. Clean mushrooms and add to bowl;
  4. Chop Mushrooms, 5 secs / Speed 5. Scrape down bowl and repeat;
  5. Add Chicken Stock Paste & Pure Cream. Cook 15 minutes / 100°C / Speed 2;
  6. Blend 1 min / Speed 9.
  7. Assembling the Bake
  8. Preheat oven to 180°C;
  9. Grate cheese 10 sec / Speed 7;
  10. Thinly slice Sweet Potato, I prefer using a mandoline;
  11. Thinly slice Chicken Breast;
  12. Assemble as you would a Lasagne as follows: Sweet Potato, 3/4 cup mushroom soup, 1/2 your Chicken, Sweet Pototo, 3/4 cup Mushroom Soup, Chicken, Sweet Potato, 3/4 cup Mushroom Soup, Cheese;
  13. Bake in your preheated oven for 1 hour;
  14. Serve with steamed vegetables - Enjoy!

Accessories you need



This recipe has become a family fav and is even requested by my daughter who HATES mushrooms!!!
The Swiss Brown mushies really add an oomph of flavour, but if you only have button Mushrooms that's fine too.
My family like the extra 50g of cheese, but I have also done it with just the 150g when I was short... you choose.
The remainding half of your Mushroom Soup can be enjoyed on it's own, or popped in the freezer to save time next time to make this recipe.
I have used as little as 200g of Chicken Breast and it was still amazing!
