Chicken Tinga

  • 4 Tomatoes, Cut into inch pieces
  • 8 pieces Canned Tomatillos, Whole (about half a can drained)
  • 30 g Vegetable Oil
  • 1 Brown Onion, Cut into pieces
  • 2 cloves Garlic, whole, skin removed
  • 1/4 tsp Mexican Oregano, (or standard oregano if mexican not available)
  • 1/4 tsp Marjoram, Dried
  • 1/4 tsp Thyme, Dried
  • 1 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 2 tablespoons Chipotle in Adobo, or to taste
  • 6 pieces Chicken Thigh Fillet

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

  1. Add tomatoes, tomatillos and onion to bowl and chop speed 5, 5 sec Closed lid
  2. Scrape down sides, add oil and sauté, Varoma speed 1, 10min Closed lid
  3. Blend speed 6, 5 seconds to make a smooth puree of sauce Closed lid
  4. Place Chicken thighs in Varoma. Add remaining ingredients to the bowl, cook 100°C, speed 1, 40 min with Varoma on top steaming the chicken
  5. Shred chicken and add to bowl, cook 100°C Counter-clockwise operation speed 1, 10 min

Tip

*if you like a thicker sauce I reduce down until its at the right consistancy.
Serve with black beans, grated cheese, corriander and cabbage in soft tortillas
