Chicken with Spinach, Ham and Pinenuts

  • 50 gram Parmesan cheese, cubed
  • 50 gram bread, torn
  • 300 gram pumpkin, peeled and sliced
  • 600 gram chicken breast, thickly sliced
  • 1.2 litre water
  • 1 onion, peeled and halved
  • 1 garlic clove, peeled
  • 20 gram Butter
  • 40 gram flour
  • 600 gram cream
  • 1 tablespoon vegetable stock concentrate
  • 100 gram ham, chopped
  • 60 gram Baby Spinach Leaves
  • 40 gram pinenuts

Recipe's preparation

  1. Place bread and parmesan cheese in bowl - 10 secs/speed 10 and  set aside.

     

    Roll chicken pieces in breadcrumb mixture and place in varoma dish.  Arrange pumpkin in varoma tray, put water in bowl and cook 20 min/varoma/speed 1.  Once cooked, set chicken and pumpkin aside to cool slightly.

     

    Place onion and garlic in dry bowl 3 sec/speed 7.

     

    Add butter and saute 2 min/100/speed 1.

     

    Add flour, cream and stock and cook for 6 min/90/speed 3 or until thickened.

     

    Add ham, spinach and pinenuts and combine 1 min/reverse/speed 2.

     

    Roll chicken in left over breadcrumb mixture, then place pumpkin in a baking dish, put chicken on top and then pour spinach mixture over the top.  Top with any remaining breadcrumbs and cheese and heat 20 mins in 180 degree oven until heated through and browned on top.

    Beautiful! I didn't coat the chicken but put all the crumbs and parmesan on the top. Also swapped ham for bacon and pumpkin for sweet potato. Will be making this againSmile

    Very yummy! I coated the chicken in flour and did egg wash before i coated in the parmesan/ bread mix. first time making it so no idea if it made a difference, but the coating pretty much stayed in tact when transferring from varoma dish to baking tray.

    side note - i suggest adding a bit of time onto sauteing the onion, as i had a bit of raw onion taste.

    will definitely make again tmrc_emoticons.)

    It was quite nice however next time I wouldn’t coat the chicken as it just goes soggy. I used pumpkin and broccoli and would season the veggies and chicken with salt and pepper and cook as directed. I would put some Parmesan in the sauce instead and then the breadcrumbs and Parmesan on the top. I also added some pasta and mustard.

    Great recipe! The bread crumb coating didn't stay on the chicken as it just soaked off in the sauce during baking. I used light cream to make it less guilty. Very delicious, will definitely make it a regular. Tongue

    This is sooo yummy. A winner with all three kids!! I triple the recipe and serve it with a side of rice.

    I use coconut cream. I layer the spinach leaves (a woolies $5 bag) and ham and pour the sauce over as it doesn't all fit in jug.

    it also takes about 30 mins of prep not 5, adding the extra doesn't add too much time thou.

    I used cashews in place of pine nuts.

    then freeze leftovers.

    We really enjoyed this. I was a bit iffy about steaming crumbed chicken, but it turned out super tender and so much flavour. I had to make a few adjustments due to lack of ingredients but it still turned out well.

    I've made this a few times now. It's absolutely delicious! As per other suggestions I use half cream half sour cream and also add about a tsp of Dijon mustard, salt and pepper. I also at least double the breadcrumb mixture

    To save on space I steam my pumpkin in the microwave.

    To save on time instead of coating the chicken in breadcrumbs a second time I just sprinkle them over the top of the chicken once in the baking dish. Then of course extra over the top of the sauce!

    I don't use any mustard in my recipe, although if I did I would probably use Dijon mustard.  I normally eat it with steamed veggies but you can always cook pasta and add it to it before putting it in the oven, and then you'd have a pasta bake,

    This was easy and yummy, but there was a lot of cream mixture left over.  The following night I cooked up some potatoes in the microwave and chopped them and placed them thru the cream mixture to make a potato bake and it was very good.

We loved this as is - however next time I will vary it & add prawns, mustard & extra ham, half cream & half light sour cream so it's not so rich & I'd add extra pumpkin in the base of baking dish as that taste is devine.
