Christmas Ham with Spiced Quince Glaze

Ham

  • 6000 grams Quality Leg Ham, Preferably with bone in - shank end

Spiced Quince Glaze

  • 100 g Quince paste, Can be store bought or made in your TM!
  • 0.6 l white wine, 60 ml
  • 2 tablespoon apple juice
  • 1 tablespoon sherry vinegar, Could use red or white wine vinegar instead
  • 1/2 tsp ground cloves
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 160 g brown sugar

Recipe's preparation

    Prepare your Ham
  1. Pre-heat oven to 180degrees.  

    Make your glaze and set aside

    Peel back skin from the ham, being careful not to tear the fat. Use a sharp knife to score around the shank, then detach the skin and use it to cover leftover ham.

    Score the ham using a small sharp knife in a criss cross pattern.

    Place ham in a large roasting tin with a cup of water.  Brush with half the glaze, then roast for 1 1/2 hours, brushing occasionally with leftover glaze until sticky, golden and warmed through.

    Rest for 30 mins before carving.

  3. Place all glaze ingredients in bowl EXCEPT sugar.

    Heat 80 degrees, 5 minutes, Speed 2 until melted and smooth.

    Add sugar and stir 80 degrees, 2 minutes, speed 2 or until dissolved
