Corned Beef Fritters

Ingredients

4 portion(s)

  • 4-6 slices corned beef, Leftover
  • 1 onion
  • 1 can corn kernals (125g each)
  • 6 tablespoons water
  • 190 g Self Raising Flour
  • 1 pinch salt
  • 2 eggs
  • 1.5 tablespoons oil - any type
  • Milk

Recipe's preparation

  1.  

    Cut corned beef into chunks and place in mixing bowl. Hit turbo button for one second intervals until beef is finely chopped but not minced. Remove from bowl and set aside in a large jug (or mixing bowl). If any large chunks are left return them to mixing bowl and chop again.

    Peel onion and cut in half, and place in mixing bowl.  Chop on speed 7 for 3 seconds.  Add to corned beef in jug.

    Drain corn and add to beef and onion, mix together.

    Place water in TM bowl and heat on 37 degrees for 1 minute, speed 1.  Add flour, salt, egg and oil, and blend on speed 7 for 20 seconds until smooth.  If too thick, add a dash of milk and mix again.  It should be thick but not as thick as cake batter.

    Pour batter over meat, onion and corn, and stir together.

    Heat some vegetable oil in a frypan and dop large spoonfuls of the batter into the pan.  Cook until bubbles form on top, then turn and cook the other side.  Set aside in a warm oven on a plate lined with paper towel and cook remaining batter.

    Serve with leftover bechemal sauce, barbecue sauce or worcestershire sauce, or condiments of your choice.

    This was a lovely receipe but next time I would not turbo my meat as it was very fine and I would have preferred little chunks. I also added garlic, carrott and zucchini with the onion and then when I mixed the batter through I added about 1 cup of grated cheese. They crisped up nicely cooking them in the vegetable oil.

    Easy dinner using left over corned beef and a few other staples. We used our left over white sauce too.

    I tested this recipe tonight for dinner. My husband loved them. I did have to add at least half a cup of milk to my batter as it was very thick but no worries there easy fixed tmrc_emoticons.) I also added garlic and fresh parsley to the mix like a few people commented and they tasted very yummy. Also they were good with a bit of salt on top and a few different sauces to dip dip  tmrc_emoticons.)

    Maybe I should have read the whole recipe first... I put the beef back in the thermomix jug at step two. It wasnt clear enough that I should have two bowls with ingredients in it at the same time... Now I have batter which looks like dog food.

    Me and my ten month old liked these, nobody else did tmrc_emoticons.( good way to use up leftover beef and easier than the traditional method. Maybe needs a little more flavour, garlic perhaps? Will try variations.
