GREEK CHICKEN MEATBALLS

Ingredients

4 portion(s)

MEATBALLS

  • 500 grams Chicken thigh fillets, 2cm cubed
  • 1 onion (medium), halved
  • parsley, fresh, handful
  • 1/2 tsp salt
  • 1 pinch pepper
  • 1 egg
  • 55-60 grams bread, frozen broken into pieces
  • 1 tbsp water

TOMATO SAUCE

  • 1 onion (medium), halved
  • 1 clove garlic
  • 20 grams olive oil
  • 440 grams tomatoes, canned, or equivalent fresh
  • 15 grams tomato paste
  • 200 grams water
  • 1/2 tsp oregano, dried
  • 1 tsp sugar raw
  • salt & pepper, to taste
  • parsley sprigs, a few

Recipe's preparation

    MEATBALLS
  1. To make breadcrumbs, place frozen bread into TM Bowl and grate for 10 seconds on speed 8. Set aside.

     

    Place onion & parsley into TM Bowl and chop for 6 seconds on speed 7. Set aside in same bowl as breadcrumbs.

     

    Place diced chicken into TM Bowl and mince for 15-20 seconds on speed 9.

     

    Add breadcrumb onion & parsley mixture to TM Bowl as well as salt, pepper, egg and water and mix for 10 seconds on speed 3.5

     

    With wet hands form mixture into small meatballs and arrange on Varoma dish and tray.

     

  2. TOMATO SAUCE
  3. Place onion, garlic, parsley into TM Bowl and chop for 5 seconds on speed 7.

     

    Scrape down sides of TM Bowl then add oil and sauté for 2 minutes at 100° on speed 1.

     

    Add tomatoes, tomato paste, water, dried oregano, raw sugar, salt & pepper to TM Bowl. Set Varoma into position and cook for 25-30 minutes at Varoma Temperature on speed 1.

     

    Place Tomato Sauce and meatballs into a serving dish to serve

     

    Serve with your favourite pasta or rice

    I made this as one of the first recipe's used after joining the community, so delicious it gets cooked once a week now, definitely a family favourite.Easily add extra things eg hidden veggies for fussy kids Big Smile

    I feel terrible giving this one star, but my hubby wouldnt eat it. unfortunately we both found this really bland, despite adding extra herbs and extra garlic. Not sure where this could be improved. Instructions easy to follow.

    I made this last night, made a few changes to suit our tastes but an awesome base. I added mozzarella cubes to the meatballs and i added capsicum, eggplant, zucchini &mushrooms to the sauce, this also made it so we can have it for lunch today.

    This was an easy and yummy dinner. I added a carrot, zucchini, red pepper and a few mushrooms to the sauce to increase the veg content. I also added a tbsp of veg stock paste. To the meatballs I added a large clove of garlic. They were so soft and enjoyed by my kids (6, 3 and 1). Thanks for the recipe.

    Great simple healthy quick meal!!

    Found both the balls and sauce a little bland even adding basil to sauce.

    Next time will be adding veggie stock to sauce along with 2x cans of diced tomatoes and perhaps some diced red capsicum to sweeten sauce and garlic to balls.

    i served with steamed rice with peas,corn and carrot through the rice for veggies.

    I also used coconut flour as suggested and it worked well.

    simple recipe, easy to follow. Whole family loved the meal, meatballs were nice and moist, more than enough sauce (no need to double the sauce).

    Paleo variations: I substituted the bread crumbs for 2 tablespoons of coconut flour, and I substituted the raw sugar for coconut sugar.

    Other variations: I had no parsley so used dried thyme in the meatballs, I also used vegetable stock in place of the salt.

    These are very tasty indeed.  We like extra sauce so just up the tomato content, etc in the sauce part.  I found the meatballs cooked in the varoma in around 17-18 minutes, this would really depend on how large you make them.  A nice healthy dish which is easy and popular with all family members.

    These were nice & the sauce really was lovely. I used pork mince as that was what I had. So I just skipped the step that minced the meat. They were nice but I needed more salt to the pork balls. Will definitely make again as they were sooooo easy.

    Yum!!! This is a winner. Simple to make, simple but yummy flavours and lovely moist meatballs. I've tried lots of recipes in the past to achieve a texture like this, maybe it's because they are steamed. As others have said I'll also try it with other meat to see if they are just as moist. This will definitely be a regular. Thanks for a great recipe.

    Yum! Good change from the usual meatball and spaghetti with tomato sauce. The chicken meatballs were full of flavour dispite not many ingredients and were lovely and moist!

    Exactly the right amount of mixture to fill the varoma top and bottom but still enough space for the steam to move.

     

    I substituted half the chicken for the same amounts of carrot and zucchini to veg this up a bit. :

    Thanks for recipe. I love the way the amounts form exactly the right number of meatballs for the top (25) and bottom (9) of the Varoma so that there is room for the steam to move. Very happy!!  Big Smile
