Greek Chicken
- 1/4 bunch Italian parsley
- 2 cloves garlic
- 20g olive oil
- 1 red onion
- 1ts Dried oregano (or fresh)
- 500g chicken thighs, you can use double the amount & use less veg if you prefer
- 1 red capsicum, chopped into rough chunks
- 1 zuchinni, cubed, large chunks
- 1 Large Sweet Potato, peeled & cubed (or white potato)
- 1tbs TM stock concentrate
- 100g pitted green or kalamata olives
- 800g can Chopped Tomatoes
- 100g crumbled feta cheese
- salt & pepper, to taste

Recipe's preparation
Place parsley into the TM bowl & chop 2 secs speed 7. Scrape out half & place to one side.
Add garlic to the TM bowl & chop for 2 secs speed 7. Add onion & chop for 5 secs speed 5. Add oregeno & oil cook for 3 mins varoma speed 1.
Add chicken & sweet potato cook for 5 mins, 100 degrees "Counter-clockwise operation" speed 1. Add remaining ingredients except the feta. Cook for 20 mins, 100 degrees"Counter-clockwise operation" speed1.
Serve with reserved chopped parsley & feta sprinkled on top.

Tip
Depending on the size of your vegies you may not be able to fit it all in the TM bowl so you could use less tomatoes if it won't all fit or put some of the veg in the varoma & cook the meal on Varoma temperature.

Lovely meal - lots of vegies in ours and only a bit of chicken and the flavour is just great. Good to serve with coucous. The feta is definitely the x factor in it at the end. Thanks for a nice recipe.

I am a newbie to the thermomix. I made Greek Chicken for my family tonight and they all loved it. I served it with some pasta for my fussy eating son and he devoured it. I think that the fetta at the point of serving gave the dish an extra zing in flavour.
