Ingredients

Greek Chicken

  • 8 --- small chicken thighs
  • 2 teaspoons mild paprika
  • 1 --- Spanish onion, halved
  • 1 --- red capsicum, de-seeded and cut into quarters
  • 4 cloves garlic
  • 1 tablespoon fresh oregano leaves
  • 40 grams olive oil
  • 400 grams diced tomatoes

Recipe's preparation

  1. 1. Pre-heat oven to 200 degrees (fan forced)

    2. Place chicken thighs into baking dish and sprinkle both sides with paprika

    3. Place garlic and oregano into mixing bowl and chop 3 seconds/speed 7. Scrape down sides and repeat

    4. Add onion and capsicum to bowl and chop 3-4 seconds/speed 5

    5. Add onion mixture to chicken, drizzle with olive oil, season well and bake for 20 minutes

    6. Remove chicken from oven and add diced tomatoes. Turn chicken and mix up the tomato with the onion mix.

    7. Return to oven and further bake for 15 minutes

Tip

If you like, you could add some sliced olives with the tomatoes (step 6).

Serve with fresh parsley and crumbled feta

    Easy quick and yummy, what more could you want. Added olives and green beans. Cut capsicum myself

    So easy and so delicious. Cooked up penne and tossed through the sauce to go with. Also added fresh green beans to the bake last 10 mins.

    I made this dish tonight and it was delicious, I didn't have the fresh tomatoes so used a tin of diced tomatoes and added some sundried tomatoes. Will definitely make it again
