Hearty Chicken & Chestnuts

  • 250 grams fresh chestnuts, (or 200gm frozen peeled Chestnuts)
  • 10 Dried Shiitake Mushrooms
  • 3 centimetres fresh ginger
  • 1 brown onion, peeled and cut into halves
  • 40 grams extra virgin olive oil
  • 750 grams chicken breast, cut into 3cm cubes
  • 80 grams dark soy sauce
  • 100 grams dry sherry
  • 15 grams raw sugar
  • 2 pinches sea salt
  • 1 clove star anise
  • 1/2 teaspoon cracked black pepper
  • 250 grams water

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Prepare Chestnuts
  1. Score an "X" into the flat side of the fresh Chestnuts with a sharp knife. Place scored Chestnuts into boiling water for 5 minutes. Peel both the outer shell and pellicle (papery layer between shell and nut) from the Chestnuts and cut in half/quarters. Set aside.

  2. Soak Mushrooms
  3. Soak dried mushrooms in boiling water for 30 minutes. Once soaked, drain, cut in half and set aside. 

  4. Prepare dish
  5. Place ginger into bowl, chop 3 seconds, speed 7. Scrape down the sides of the bowl and repeat.

     

    Add onion to the bowl and chop 2 seconds, speed 6. Scrape down the sides of the bowl. Add oil and saute 4 minutes, 120 degrees, speed 1.

     

    Add chicken and cook 5 minutes, 100 degrees, Counter-clockwise operation, speed 1.

     

    Scrape the bottom of the bowl and loosen up any chicken that has attached to the blades. Add soy sauce, sherry, sugar, salt, star anise, pepper and water. Cook 10 minutes, 98 degrees, Counter-clockwise operation, speed 1.

     

    Add reserved Chestnuts and mushrooms and cook 15 minutes,  98 degrees, Counter-clockwise operation,speed 1.

     

    Pour into Thermoserver and allow to rest for 10 minutes before serving.

Tip

Serve with mashed potato and steamed veges.

Serve with fresh crusty bread rolls. 

Chestnuts are easiest peeled while still warm.
