Hillbilly's Lamb Shanks

Ingredients

4 portion(s)

Shanks

  • 4 pieces Medium Size Lamb Shanks
  • to taste Mixed Herbs or Spices

Sauce

  • 4 Carrots Large, Cut into Chucks
  • 3 stalks Cerery, Cut into Chucks
  • 1 Onlion, Cut into Halves
  • 4 cloves Garlic.
  • 40 grams olive oil
  • 2 tablespoon TM Veggie Stock
  • 1200 grams water
  • 8 portions tomatoes, Cut into Quarters
  • ground pepper, To Taste
  • 1 tablespoon brown sugar
  • 100 grams red wine, Of your Choice
  • 50 grams Cornflour.

Side Serve

  • Mixed veggies of choice, Broccoli, Peas, Cauliflower

Mash Potatoe

  • 750 grams Potatoes, Cut into cubes
  • 30 grams Butter.
  • 50 grams Milk
  • 700 grams Water.
  • Salt & Pepper, to taste
  • 1 teaspoon TM veggie stock paste
  • Shake of Garlic Salt

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Lamb Shanks
  1. 1) Season your Lamb Shanks with your desired herbs & spices.

     

    2) Place Lamb Shanks into the Varoma bowl, then season with salt & pepper. place your Varoma Lid on and put aside till later.

  3. 3) Place carrots, onion, cerlery and garlic into the TM Bowl and chop 5 sec/speed 7.

     

    4) Scrape down sides of the bowl with your spatula, add Olive Oil and saute 5 min/Varoma/speed 2

     

    5) Add TM Veggie Stock, Water, Tomatoes, Sugar, Red Wine and Pepper to bowl. Place lid without the Measuring Cap and place Varoma on top in position. Cook 90 min/Varoma/speed 2.

     

    6) After the 90 min remove Varoma Lid and turn Lamb Shanks over so that it cooks the shanks evenly and cook for a further 60 min/Varoma/speed 2.

     

    7) When anticipated cooking time is completed, remove the Varoma and place aside. Place Cornflour into the bowl and cook for a further 5 min/90 temp/speed 4.

     

     

     

     

  4. Mash Potatoe
  5. 10) Place cubed potatos into steam basket and set in TM bowl with 700 gms water . Add 1 tspn vegie stock paste for a bit of extra flavour. Boil 25 min/100 temp/speed 2 with MC in place til pototoes nice and soft,almost over cooked. Cook time will depend on type of potato. 

     

    11) Remove basket and pour off water  

     

    12) Place potatoes into the bowl and chop 3 secs/speed 5 then add butter as you would when mashing by hand and a dash of milk or cream ditto. 

     

    13) Place butterfly VERY IMPORTANT and twist clockwise to lock in place. Mash 10 secs/speed 4  or to desired creaminess. Adjust with butter and milk and garlic salt.

     

  6. Serving
  7. Serve potatoe immeditaely onto plate, placing a Lamb Shank on top of the potatoe, then pouring the sauce over the shank and add the side serve of mixed veggies.

Tip

In Step 6 for 6 small shanks, i suggest cooking  for 25-30 mins/Varoma/Speed 2 OR for 4 larger shanks 50-60 minutes/Varoma/speed 2
