Cranberry and Macadamia Stuffing

  • 3 slices Bread, frozen, torn into pieces
  • 30 g Parmesan cheese
  • 3 garlic cloves
  • 150 g macadamia nuts
  • 100 g dried cranberries
  • handful of fresh parsley
  • Salt and pepper
  • 1 egg

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Stuffing

    Place bread, cheese and garlic into mixing bowl
    Chop 10 seconds, speed 9

    Add all other stuffing ingredients
    Turbo 1 second, 3-5 times until desired consistency

    Set aside


    Chicken
    One by one lay each chicken thigh onto chopping board, cover with plastic wrap and lightly pound with a meat mallet

    Remove plastic wrap and lay the chicken thigh onto a piece of baking paper

    Spread some of the reserved stuffing mixture evenly over the chicken thigh and roll into a roulade

    Wrap the roulade in baking paper and twist each end, then wrap tightly on aluminium foil

    Arrange roulades into both Varoma dish and tray

    Fill TM bowl with 700g water

    Place Varoma into position and
    Cook 15 minutes, Varoma temperature, speed 4

    Rotate position of roulades to ensure even cooking then cook for a further 10-15 minutes, Varoma temperature, speed 4

    Rest for 5 minutes, then ensure chicken is cooked through

Tip

You can quickly brown chicken in a pan after it has steamed for a 'browned' look

Serve with steamed or roasted vegetables and a creamy mustard sauce or gravy
