Jerk pork ribs

Jerk Marinade

  • 1 brown onion, halved
  • 4 cloves garlic, peeled
  • 2 chillies, red, or green, tops removed
  • 1 pineapple chunks in juice, small tin
  • 2 tablespoon Cumin Powder
  • 2 tablespoon All-Spice
  • 6 sprigs fresh thyme, leaves only, or tbsp died
  • 40 grams Worchestershire sauce
  • 20 grams English mustard, or dijon for more mild
  • 200 grams tomato passata, or tinned chopped tomatoes, or ketchup
  • 20 grams White wine vinegar or Rice Vinegar
  • 50 grams brown sugar, to taste
  • 1000 grams pork ribs, cut into singles

Recipe's preparation

    Jerk sauce
  1. Place all ingredients (except ribs) into bowl, blend 9sec, speed 8

  2. Pour all marinade over ribs, allow to marinade at least 30 mins in fridge, but 2 hours to overnight is best

  3. steam ribs
  4. fill varoma with 1.5l water, 


    tip ribs and marinade into a ceramic bowl that can fit into varoma (without tray) and the lid will sit properly on. Place 2 bread knives as seen in picture under bowl as seen in picture to allow steam to distribute evenly up and around bowl. 


    please note the lid will still need to be on snugly, as with any recipe!

  5. steam at Varoma, 60mins, sp 2


    using varoma lid as a tray, remove varoma.


    discard remaining water in bowl


    replace lid and varoma, remove knives


    tip ribs and marinade into base of varome, the marinade will drain down into emty tm bowl, give  a little shake to help marinade down

  6. reduce on 100 degrees, speed 2.5  for 10 mins to thicken to sauce to add back ontop of the ribs before serving

Tip

Serve with crunchy Asian salad, with yoghurt dressing....I will upload this too!

    Great recipe, worth taking the time to make. I used cider vinegar as we had no white wine vinegar.
    Served on a bed of mashed potatoe with cracked black pepper and crunchy salad.

    We loved it, will marinade overnight next time for an even deeper flavour!
