Laksa Curry

  • 1 portions laksa paste, Check my RC recipe for laksa curry paste in this recipe.
  • 500 grams water, to be mixed with the chicken stock paste
  • 1 level tablespoon chicken stock paste, mix in with the 500 grams water
  • 400 grams coconut cream, full fat
  • 250 grams skinless chicken thigh, cut in 3 cm cubes
  • 2 tablespoons vegetable oil
  • 2 level teaspoons chilli sauce, Check my RC recipe for chilli sauce for laksa. Optional.
  • 1 teaspoon brown sugar, Or palm sugar
  • 75 grams Vermicelli noodles, dried
  • 100 grams Chinese egg noodles, hokkien noodles
  • 100 grams tofu, firm, cut into 1 cm squares and deep fried in peanut oil until crispy. Alternative: ready made Tofu puffs
  • 2 heaped tablespoons Fried shallots, crispy
  • 2 bunches fresh bean sprouts, Handfuls to top your laksa
  • 1 --- lime, cut into wedges. optional side/garnish
  • 1 bunches fresh coriander, optional garnish

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Laksa broth
  1. Add oil to mixing bowl. Heat 1 min, 100 degrees speed 1.
  2. Add laksa paste. Sautée 5 mins, 100 degrees, speed 1.
  3. Add about 50 grams of the coconut cream, the creamiest part. Cook for 3 minutes, varoma, speed 1.
  4. Add chicken stock paste, water, the rest of the coconut cream, sugar and chilli sauce (optional). Cook 25 mins, 100 degrees, speed 1.
  5. Add chicken. Cook 10 mins, 100 degrees, reverse speed 1.
    At the end of the time, check that the chicken is cooked through. If not, extend the cooking time in this step.
  6. Before the end of the cooking time, cook noodles according to the packet instructions. I make mine by placing them in a thermoserver and covering them with boiling water, placing the lid on and leaving them to cook until ready, then drain and divide into serving bowls.
  7. Taste and adjust seasoning.
  8. Garnish with Tofu, bean sprouts and fried shallots.

    Optional extras include lime wedge, fresh coriander and sliced birds eye chilli.

    Optional: chilli laksa sauce on the side

Tip

You can also add prawns after 7 mins cooking time has passed with the chicken ste and increase time by 1 - 2 mins if they aren't cooked through (check the prawns at the end of the cook time).
You can add an additional half teaspoon of the optional chilli sauce (for an extra heat kick), lime juice in (for sour) and fish sauce (for saltiness).

    This laksa is restaurant quality, so much flavour! I have tried a few Thermomix laksa recipes and I have to say this one tops the lot. So authentic! Definitely make the paste that goes with this. Thank you for sharing your recipe tmrc_emoticons.)
