Lamb Stew with Rosemary Dumplings

Ingredients

Rosemary Dumplings

Rosemary Dumplings

  • 3 sprigs of Rosemary, leaves only
  • 230 g Self Raising Flour
  • 60 g Butter, chilled, cubed
  • 120 g Milk

Lamb Stew

  • 2 Rashers of Bacon, roughly chopped
  • 1 onion, halved
  • 20 g olive oil
  • 500-600 g lamb leg, deboned, fat removed and cut into 2cm cubes
  • 2 tbsp Vegetable stock paste
  • 600 g water, adjust amount to not exceed 2L maximum mark
  • 3 sprigs thyme, leaves only
  • 2 carrots, thickly sliced
  • 2 potatoes, thickly sliced

Recipe's preparation

    Rosemary Dumplings
    1. 1.   Chop rosemary 3 sec / speed 7
    2. 2.   Add all remaining dumpling ingredients into the bowl and mix 20-30 sec/speed 5 dough will combine and form a ball.
    3. 3.   Roll dough in balls (approximately Tablespoon size) and placed on to the Varoma tray and dish. Set Aside
  1. Lamb Stew
    1. 1.   Without cleaning the bowl add onion and bacon and 
    2. chop 3 sec / speed 7, scrape down sides of bowl.
    3. 2.   Add oil and sauté for 3 min/Varoma/speed 1 MC off
    4. 3.   Add lamb and cook  for 2 min/Varoma/Counter-clockwise operation/Gentle stir setting
    5. 4.   Add vegetable stock paste, water, thyme, carrots and potatoes cook 40min / 80 deg / Counter-clockwise operationGentle stir setting
    6. 5.   Place Varoma with the dumplings into position and cook 
    7. 25 min/Varoma/Counter-clockwise operation / speed 1

  • This has to be the best stew

    This has to be the best stew I have ever done. I added some suet to the dumplings and my whole family loved it, even my daughter who is the fussiest eater ever, she even went back for seconds. My husband has asked me to make it again, which is also unusual for him. The lamb was so tender I can't even begin to tell you how delicious this stew is. Will definitely be making this again. Thank you so much for adding this recipe xx

    Stew was delicious but the dumplings were quite dry in the inside, did i do sth wrong or are they suppose to be like that? Any suggestions to keep it more moist inside?

    So easy and tasty! Like other reviewers, my potato kind of disappeared into nothing (I even put three in to try stop that). It was still lovely though- and the dumplings were simply amazing!

    Thanks for adding. This was easy and yum. Might save this for entertaining others as opposed to a family dish. My kids didn't really like the dumplings. My potatoes disappeared into the mix.... Would have preferred large chunks. Tasted great. Was easy to follow. I didn't find the liquid to be very runny at all. It blended well with the dumplings tmrc_emoticons.)

    Mmmmmm yum! I sprinkled a bit of cornflour in before I put the dumplings in and it was perfect tmrc_emoticons.) I also added sweet potato - very nice! Will be adding this to our Winter menu!! Thanks
