Mum's Meatloaf

Ingredients

8 portion(s)

Meatloaf

  • 200 g carrots
  • 2 cloves garlic
  • 1 medium onion quartered
  • 500 g Minced beef
  • 1 egg
  • 20 g Worcestershire sauce
  • 100 g bread crumbs
  • 5 g salt
  • 1 tablespoon Italian herbs
  • 100 g tomato sauce
  • 1 handful of grated cheese

Recipe's preparation

  1. 1. Chop the carrot for 5 seconds on speed 5 then remove from bowl.

    2. Chop the garlic and onion for 2 seconds on speed 4.

    3. Add the oil and saute on 100 dgrees for 2 minutes speed 1.

    4. Add all other ingredients except the cheese.

    5. Blend on speed 8 for 10 seconds on reverse Counter-clockwise operation.

    6. Pour into a loaf tin and bake for 45 minutes at 180 dgrees celscius.

    7. Remove from oven and sprinkle the top with cheese.

    8. Bake for a further 15 minutes.

    Serve with hot vegetables.

    Fabulous the next day on sandwiches or for a picnic lunch.

    I didn't add cheese as I thought that was kind of odd but the rest was great! The kids ate every bit so that's a win!!

    Turned out really nice. I subbed out the breadcrumbs for whizzed up rolled oats as wheat doesnt agree with me. I put streaky bacon rashers through the middle. Yummy!

    Lovely meatloaf! I have made this one many times. I also throw in some chia seeds and use cornflake crumbs if I don't have bread crumbs and it still tastes great!

  • I forgot to add the carrot

    I forgot to add the carrot and couldn't find my loaf tin. I cooked it in a Tupperware slice form tray for about 45 mins and it was amazing. I added about 20g of BBQ sauce and the rest was tomato sauce. Also I used 3 garlic cloves instead of two. It doesn't need any sauce when you serve it either. Thanks so much!!!!! tmrc_emoticons.)

    I baked the meatloaf at 180 instead of 100 and it turned out perfectly.  Best meatloaf I've ever made!!  tmrc_emoticons.D
