  • 2 tsp salt
  • 2 garlic cloves
  • 2cm piece of whole ginger
  • 2 tsp 5 Spice powder
  • 1 tsp fennel seeds
  • 1cup water
  • 1/4 c chinese wine or sherry
  • 1/4c orange juice
  • 1/4c brown sugar
  • 2 tbsp soy sauce

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Dry the skin of pork belly and cut diagonally but not all the way through to flesh.  Rub oil and salt into skin and place into roasintg dish.

    Mince garlic, fennel seeds and ginger  3 secs speed  6 .  Add sugar, liquids, spices and mix 15 secs sp 1.  Add fennel seeds.  Pour around pork belly in dish making sure skin is above the liquid.

    Put into 180 oven for 1 hr 30 mins until tender.  If skin not crackled, turn up the heat to 200 for 10 mins or until it crackles.

    Remove meat to Thermoserver to  keep warm.  Place liquids into Thermomix with drained plums, cook 20 mins  sp 1 Reverse,@ 100C.  Add cornflour mixed with cold water till a smooth paste through lid to make sauce during the last 10 minutes to thicken.
