Pork and Prawn meatball curry

Ingredients

4 portion(s)

meat balls

  • 500 grams pork mince
  • 15 large raw prawns
  • 2 cloves garlic
  • 3 centimetres fresh ginger
  • 3 tablespoons fish sauce
  • 1 egg white
  • 1 tablespoon peanut oil

curry paste

  • 2 tablespoons coriander seeds
  • 1 teaspoon cumin seeds
  • 1/4 teaspoon white pepper corns
  • 3 long red chillies
  • 2 eschalots
  • 4 cloves garlic
  • 2 tablespoons coriander root
  • 6 cm fresh ginger
  • 1 stalk lemon grass (white parts)
  • 1/4 teaspoon shrimp paste
  • 1 tablespoon peanut oil

sauce

  • 500 g coconut milk
  • 250 g chicken stock
  • 1 tablespoon palm sugar
  • 1 tablespoon lime juice

Recipe's preparation

    meat balls
  1. place ginger and garlic in tm bowl and mince 3s speed 8, scrape down sides.

  2. add prawns, 1-2 seconds speed 8, they go to paste very easily if over processed, scrape down sides.

  3. add mince, 1 Tablespoon fish sauce and egg white reverse speed 3 for 10s or till well combined. Form into walnut sized balls, place in varoma and refrigerate for approx 1 hour.

  4. Curry paste
  5. Place coriander seeds, cumin seeds and white pepper corns in TM bowl.

    Dry roast 3min/100*c/speed 9

  6. add remaining ingredients and make paste 5s speed 8

    scrape down as needed.

  7. saute Varoma/ 3 mins/ speed 1

  8. Sauce
  9. To the paste add coconut milk, chicken stock, palm sugar, 2 tablespoons fish sauce and lime juice.

    place varoma with meatballs on top and cook 15-20 mins/ varoma/ speed 2

Tip

The origional recipe was in the Donna Hay magazine for May or June, it deep fries the meat balls, I went for the healthier option of steaming and they were lovely. Serve with noodles or rice, steamed snow peas and carrotts would also go well. I used dried chillis so its not very red!
