  • 40 grams ginger, sliced in 2mm"coins"
  • 20 grams Garlic cloves peeled
  • 120 grams water/divided into 60 gr x 2
  • 300 grams onions, peeled and quartered
  • 30 grams ghee or oil
  • 1 tablespoon green cardamom pods
  • 2 bay leaves
  • 6 whole cloves
  • 2 tsp Peppercorns
  • 5 cm cinnamon stick
  • 1 tsp Ground Coriander
  • 2 tsp ground cumin
  • 1 tbsp ground red paprika
  • 1/4-1 tsp ground chilli powder
  • 1 1/2 tsp salt
  • 250 gram Greek style yoghurt
  • 1 kg Lamb cut into 2.5 cm cubes
  • 50 gram vegetable oil
  • 1 tsp garam masala
  • 7 --- grinds of black pepper
  • fresh coriander chopped to garnish

Recipe's preparation

  1. 1. Mince the ginger & garlic by dropping them onto the running blades at Sp 9.  add 60 g water & blend 1 minute/Sp 10.  Pour out and set aside for later.

    2. Chop onons with the ghee 10 seconds/Sp 4 1/2.  Cook 7 min/100C/SpSpoon.

    3. Add the whole spices (cardamom pods, bay leavs, cloves, peppecorns, cinnamon stick) then cook 3 min/Varoma Temp/SpSpoon until fragrant.

    4. Add the ground spices, salt, yoghurt and remaining 60 gr water.  Cook 5 min/90C/SpSpoon. Meanwhile, brown the meat in batches with the oil in a large oven-proof pan on the stove. Set the meat aside on a plate.

    5. (OPTIONAL) If you prefer not to have the traditional whole spices in the finished dish, blend 1 minute/Sp   10 at this point.

    6. Add the garlic ginger paste to the oil left in the pan.  Stir and fry about 3 min until it turns a shade darker.  Add meat and all juices to the garlic and ginger mix combine add meat and the spicy yoghurt mixture, combine bring to boil then simmer for 10 min. Pour into the large Oven Proof Casserole Dish - Place the Casserole Dish in the Oven and cook for 2 hours or until lamb is tender.

    7. Add Garam Masala & pepper just before serving - Garnish with freshly chopped Coriander. Serve with Cumcumber & Mint Raita.

    I really want to cook this but am not sure what temp to put the oven to? It says to cook for 2 hours so I'm assuming its a low temp? I look forward to your reply?
