Rosa's Chicken and Rice

  • 2 teaspoons peanut oil
  • 1 clove garlic
  • 1 large capsicum, red or green
  • 1 medium onion, (optional)
  • 3 teaspoons finely chopped pickled jalepeno pepper, (optional)
  • 2 large, diced skinless chicken breasts, 250g each (500g total)
  • 350 grams long grain rice
  • 1 tablespoon TM chicken stock concentrate
  • 1 can Tinned tomatoes
  • 0.6 litres Boiling water
  • 2 tablespoons tomato paste
  • soy sauce, (optional, to serve)

Recipe's preparation

  1. This is a simple, quick and easy tomato flavoured risotto style dish, perfect for a weeknight meal with leftovers for lunch the next day.  


    This recipe is naturally GLUTEN FREE (but check your soy sauce if you choose to use this optional ingredient). 


     


    1.  Place garlic (and onion, if using) in mixing bowl.  Chop 3 seconds/speed 7.  Scrape down sides of bowl.   


     


     2.  Add capsicum (cut roughly into eights) into bowl.  Chop 2 seconds/ speed 4.  Scrape down sides of bowl. 


     


    3. Add peanut oil and jalepenos (if using). Saute 2 minutes/Varoma/Speed 1/counter-clockwise operationMeasuring cup OFF.


     


    4. Add diced chicken.  Saute 2 minutes/Varoma/ Speed Gentle stir setting/counter-clockwise operationMeasuring cup ON.


     


    5. Add rice.  Saute 1 minute/Varoma/Speed Gentle stir settingcounter-clockwise operation / Measuring cup ON.


     


    6. Insert butterfly.  Add chicken stock concentrate, tinned tomatoes and tomato paste.  Add water up to 'max' capacity - approximately 600mls.  Cook 17min/100 degrees/Gentle stir setting/counter-clockwise operation/ measuring cup ON.  


     


    Tip: only fill the bowl with boiling water to the 'max' capacity line - do not overfill.  I find this is 600mls or so, but use whatever amount is needed to reach the 'max' line.  Check the dish at the 10 minute mark and add additional water if needed to ensure that the liquid is still covering or almost covering the rice. 


     


    Optional:  serve with a light drizzle of soy sauce.  My husband prefers this dish served with soy - I prefer it without.

  • I would tweak a few things in this one... not 100%...

    I would tweak a few things in this one... not 100% certain what, but before I added the butterfly I needed to empty the bowl, there was too much already in the bowl. I've also had to add an extra 5 mins cooking, it never reached the desired temp each time until the end. I DID use more than 500g chicken though. That would definitely have impacted things like the amount of water (420g).
