  • 80g parmesan
  • 5 cloves garlic
  • 2 tablespoon chicken stock paste
  • 400g water
  • 100g Butter
  • 200g double thickened cream
  • juice of 1 large lemon
  • 1 tsp dried thyme
  • 100g baby spinach
  • 1 cup long grain rice
  • 1kg skinless chicken thigh fillets
  • 2 tablespoons sweet paprika
  • pinch salt
  • pinch black pepper

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Preheat oven to 180 degrees.
  2. Grate parmesan, 10 seconds, speed 10. Set aside.
  3. Chop garlic for 3 seconds, speed 7.
  4. Add parmesan, chicken stock paste, water, butter, cream, lemon juice, thyme and spinach to the bowl and cook for 15 minutes, 80 degrees, Counter-clockwise operation, speed 2, MC off.
  5. Cover the base of a large casserole dish with the uncooked rice.
  6. Add paprika, salt and pepper to a shallow container and press chicken thighs into the mix and then place the chicken thighs on top of the rice in the casserole dish.
  7. Pour sauce over the chicken, making sure the spinach is evenly placed.
  8. Cook for 40 minutes, or until chicken is cooked through.
  9. Enjoy!

    Love the original recipe and I always fill the baking dish with veggies usually mushrooms,tomato, green beans, snow peas, zucchini and asparagus but added a half cup of rice underneath tonight and followed this recipe. Very glad I did- it's delicious and easy to make!

    TASTY AND SO EASY!! I used Aborio rice and doubled the recipe but used 600g thickened cream. I also used 9 x thigh pieces rather than fillets and added brocolini and brocoli that I had in the fridge. And rather than mix the paprika, salt and pepper in a bowl and press the pieces, I just sprinked it all over the chicken once it was in the pan. Fed a family of 5 adults with left overs. Huge hit in the house.

    I made this for dinner tonight & it was delicious! I read previous comments before cooking & tweaked it a little - 2tsp chicken stock, 300ml cream, I used chicken breast & risoni under the chicken.

    Yummy! The rice was perfect & fluffy & full of taste. I'm not a massive fan of lemon in savoury but it is perfect. I sealed the chicken (sprinkled it with paprika & salt &
    pepper whilst cooking) in the pan first & then put in oven uncovered for 43 mins and it was tender & golden! Winner winner chicken dinner, can't believe I actually made something so delicious!

    We found that two tablespoons of chicken stock paste was too much and didn't make it very nice to eat. In the original recipe it is 2 teaspoons so I will try it again with that.

    I've only had my thermomix 6 months but I absolutely adore it. One of my favourite recipes is Lala's lemon chicken. Unfortunately, with a baby I can be very time poor so I don't get around to making it. Im so glad I stumbled across this easy version! It tastes just as good, the rice cooked in the dish is a fantastic addition, and it's so simple to make! Highly recommend

    Thanks for this simplier recipe. This is so much easier and not so fiddly! My family loves the original recipe and this is just as good. The only thing I did differently was I still pan fried the chicken (with paprika, salt and pepper) whilst the sauce was cooking in the TMX.

    This was fantastic I did tweek it a little only to suit what I had available!

    I used tmx vege stock instead of chicken stock paste
    I used chicken breast trimmed and cut in half length ways
    two lemons juiced including zest of one
    aborio rice on the bottom with cherry tomatoes and green beans
    300 ml of cream instead of 200 ml as I wanted to use the whole container.

    it really was a lovely dish and will become a regular here in this house. Thank you for sharing !

    Lala's butter creamy chicken recipe has become one of my favourites.
    We preferred Arborio rice and used 550 g strips of thigh. Plenty for two people.
    Maybe will halve the butter next time, but it was very satisfying for a cold winter's day!
