Sneaky Vege & Chicken Nuggets

Chicken Nugget

  • 3 Spring onions, (white part only)
  • 1 clove garlic
  • 1 egg
  • 1 tsp tmx stock, either Vegetable or Chicken
  • 500 g chicken (mince)
  • 200 g bread crumb for coating
  • 60 g breadcrumbs to add to mixture
  • 1 stick Celery
  • 1 leek, (white part only)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Nugget Mixture
  1. 1. Select 3-4 vege to add to your nuggets, I use 3 spring onion white section only, 1 celery stick, the white section of a 1 leek and 1 clove of garlic. 

    2. Throw all veges into the Thermomix and chop for 5 seconds at speed 8. Repeat if necessary. 

    3. Add an egg and Thermomix stock mix (either vege or chicken stock). Mix for 5 seconds at speed 6.

    4. Add chicken mince and mix on reverse for 10 seconds at speed 5.

    5. Add 60 grams of breadcrumbs and mix on reverse for 10 seconds at speed 5. Make sure all mixture is blended well. 

    6. Use a dessert spoon to collect micture and place onto baking paper. Pop nuggets into fridge for 10 minutes. 

    7. Heat 2-3 tablespoons of vegetable oil in a large fry pan.

    8. Put breadcrumbs into a bowl and roll individual nuggets in breadcrumbs.

    9. Place each nugget into fry pan and cook until golden brown on each side for approximately 7-10 minutes.

Tip

The original recipe "Kid Friendly Chicken Nuggets" by Sara's Kitchen Addiction, can provide directions for using the oven after a quick fry so as to reduce frying time in oil.

Nuggets can be frozen and reheated either once cooked or after breadcrumbing.

    These are delicious.

    I wasn't patient enough to pop it in the fridge to chill or to fry them in the pan! I rolled and crumbed them and popped them all straight onto oven trays before baking them at 200 degrees Celsius for 10 minutes, then flipping them and baking for another 5 minutes. I sprayed the tray and the nuggets with oil before baking too so they went golden and crispy.

    I also added finely chopped fresh herbs.

    These were very easy to make and tasted delicious. A hit with the family and they made great finger foods for my 10 month old.

    my son is coeliac so I swapped the bread crumbs for gluten free crmbs. I did find there was a bit too much liquid after I blitzed my veggies, so I allowed them to drain into another bowl before adding the veggies to the meat (I later added the liquid to soup). 

    i sprayed my nuggets with olive oil and baked them to save a bit of time and they still came up really Well. 

    The veggies suggested here gave the perfect 'nugget flavour'

    can't wait for the kids to get home and try them.

    Thanks for a great recipe. I will definitely use it again.
