Sous vide fillet of beef

  • 1850 g water
  • 30 g lemon juice
  • 1 portion Steak of your choice
  • 3 sprigs Thyme or Rosemary, (fresh or dried)
  • 1 garlic clove, (crushed)
  • 1 tbsp Butter
  • 1 tsp mustard, (optional)
  • 1 tbsp olive oil, (for searing)
  • Salt & Pepper, (for seasoning)

      Recipe is created for

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Sous Vide Steak
  1. Weigh in 1850g of water into mixing bowl, add 30g of lemon juice to water (lemon juice is to prevent rust in TM bowl).
  2. Place simmering basket inside mixing bowl.
  3. Place the steak, herbs, garlic & butter & (optional mustard) into sealable vacuum bag or ziplock bag and seal closed removing all air.
  4. Submerge the bag into the water in the simmering basket. Ensure bag is completely covered with water (water should be able to circulate around the bag).

    Place TM lid and measuring cup on, then start Sous Vide function/30min/62°C.
  5. Remove simmering basket with aid of spatula, then place bag with steak aside to rest for 5 minutes.
  6. Heat a frying pan over meduim/high heat and add some oil.
  7. Remove steak from sealable bag (can discard herbs or not), place steak into frying pan and season. Sear on all sides for approx. 20 seconds or until cooked to your liking. Serve and bon appetite

Tip

Maxium 2 pieces of steak fit in simmering basket.

Can use fresh or dried herbs.
Mustard is optional.
