Spanish Chicken with Thyme

  • 2 onions
  • 4 cloves garlic
  • 4-6 bacon rashers
  • 50 grams olive oil
  • 4 diced chicken thighs
  • 15 grams Corn Flour, Optional
  • sea salt & pepper to taste
  • 7 dates
  • 1/2 teaspoon chilli powder
  • 360 grams TM chicken stock
  • 1 bunch fresh thyme
  • mixed vegetables, 2-3 cups of fresh vegetables, ie zucchini, green beans, mushrooms, capsicum

Recipe's preparation

  1. Place onions and garlic into TM bowl and chop for 3 seconds on speed 7.  Add olive oil and saute for 2 mins Varoma temperature.


    .

  2. Add chopped bacon and chicken coated in flour and saute for 5 mins at 100 degrees on speed 1.

  3. Add dates, chilli, salt and chicken stock to TM bowl.


    Cook for 8 minutes at 100 degrees on counter-clockwise operation and speed 1.


     

  4. Add vegetables and thyme and cook for 12 mins, at 100 degrees, on counter-clockwise operation, and speed 1.


    Pour into thermoserver, season, and serve with TM mashed potato/sweet potato, steamed rice or couscous.

Tip

This has been a family favourite of ours for years.  For those who prefer less chilli, add just a quarter of a teaspoon.  Enjoy : )

 

Leave the MC off and use the basket on top of the lid to allow evaporation.

    An easy dish to make, 3 out of 5 of us thought it was ok.  Just not to the others taste.  A shame as I was looking forward to making it and hoped they'd enjoy it :/

    If you like thyme this is a perfect dish, lovely flavour and not what I expected. I did reduce the liquid to 250ml and did not use the cornflour & added a couple of extra dates for sweetness. Yum.  Would make again. Thank you.

    Great dish Jodie. I love the hint of thyme through the sauce. I've only had my Thermomix for a couple of weeks and this was my first " casserole". In the end there was plenty of sauce so I could probable add more veges next time. We had it with couscous and a cucumber and yoghurt salad which was quite refreshing with it.   tmrc_emoticons.)

    Thanks for the feedback everyone, we had this for the first time in ages again tonight and it is a winner!  Don't forget to leave the MC off and use the basket on top of the lid to stop spills and allow evaporation.  I have reduced the fluid amount so the dish has less sauce.  The sauce is perfect to soak up with mashed sweet potato!

    Absolutely loved it!  I used two small red chilies and I would try maybe three or four next time.  I found it to be very runny and not gluey. Flavour was awesome!

  • Total winner.  Whole family

    Total winner.  Whole family LOVED this.  I would recommend paying attention to the cornflour/liquid ratio.  We found it a bit gluey as quoted but I added more liquid and cooked for another 5 minutes.  Fabulous flavours.  DO NOT omit the dates or the chilli.  They are really necessary for depth of flavour.  This one is destined to go in the "Keeper" file.  None left after Husband, Self and two 5 year olds had attacked it.  Even the baby had a nibble.
