Sweet Chilli Chicken Rissoles

Rissoles

  • 2 chicken breasts, (500g approx)
  • 50 grams carrot
  • 50 grams red onion
  • 50 grams frozen peas
  • 1 egg
  • 50 grams breadcrumbs
  • 3 tablespoons Sweet chilli sauce
  • salt and pepper to taste

Vegetables

  • 650 grams water
  • 650 grams potatoes
  • Other vegetables of your choice
  • 35 grams Butter

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Chop chicken breasts and mince for 10 sec / sp 7 - set aside.

    2. Without cleaning bowl, add carrot and onion, blitz for 5 sec / sp 9, scrape.

    3. Add peas, egg, breadcrumbs, salt, pepper and 1 tbsp of SC sauce and the reserved chicken mince and mix for 25 sec / Counter-clockwise operation / sp 4.

    4. Using wet hands, form into balls and refrigerate for 30 minutes (tip 1).

    5. Add water to clean bowl and and place rissoles on Varoma tray (tip 2).  Brush tops of rissoles with 1 tbspn SC sauce and cook for 10 min / Varoma / sp 3.

    6. Add chopped potatoes to simmer basket and insert into bowl.  Place vegetables in varoma dish and cook 20 min / Varoma / sp 3.

    7. Brush rissoles with remaining sauce and check potatoes and veggies, and cook for a further 5 min / Varoma / sp 3 if needed.

    8. When cooked, remove Varoma, remove basket from bowl, discard water and insert butterfly and potatoes.

    9. Add butter and milk and mash 10 sec / sp 4.

Tip

1. Only refrigerate for 30 minutes, or they get too cold in the centre.  If preparing earlier, varoma for 15 minutes at step 5. Pan fry at this point if not all-in-one meal.

2. Line the tray with wet baking paper to stop anything going through to the veggies, but leave some holes uncovered to allow the steam to get through.

Variations:

1.  For GF sub breadcrumbs for 2 slices of blitzed GF bread or cornflour.

2. Want more spice?  Add 1/4 tsp of chilli at step 3.  

3. More herbs?  Add 1 tsp of dried herbs or 20g of fresh herbs at step 3.

    These were a good mid week meal. I added all the sweet chilli sauce to the mix as I fried them. I also sprinkled sesame seeds on them before cooking. It made 6 good sized patties.

    My 7yo son helped me cook this for dinner tonight and we did all except last step. Rissoles were cooked nicely and not dry. Veggies all cooked to perfection. I'm glad I prepped most of the veg beforehand otherwise would have taken a lot longer. We avoided fridge as dinner was already running behind. Didn't seem to affect the cooking. Would add some extra flavour next time, although kids enjoyed and 7yo had thirds... It's a rarity as he is usually the most fussy eater in the house.

    These are so simple yet so tasty.  Had them for a girls lunch recently and made our own GF Bread Crumbs to make them Gluten Free.  So delicious, I can't wait to make them for my family.   Love

    Hi Megan.  Thanks for the feedback.  Yes, the choc-chip cookies are a big hit in our family too.  I guess the amount of vege stock would depend on what flavours you have put in there and how strong it is because remember that it won't be watered down per se in the chicken and the stock is a concentrate.  The basic rissole recipe deliberately doesn't contain a lot of herbs and spices, so that you can add what suits your own tastes, so maybe try what you suggested and then you can adjust up or down next time.  I also like doing this with sweet potato and that's great too.

    Hi Tracey, looks like a great recipe and can't wait to try. If I were to add the thermomix vege stock, would you recommend one tablespoon of it instead of dried or fresh herbs? I've looked at your other recipes too and I think the chocolate chip cookies will get a good workout this weekend.  Cooking 7  Big Smile

    I am new to the Thermi and cooking world and I didn't realise that reserve meant "put aside" until after I had added and tried to mix the carrots in.

    I also didn't know what baste meant so I had to google it. Maybe the worlds could be changed to help newbies like myself?

    Otherwise overall these were wonderful! I will defiantly be making them again! The consistency of the mash potatoe!!

    These were amazing! Thank you so much! Like little parcels of chicken sweet chilli meatloaf love !! Lol

    i had potato and sweet potato with it, and loved that it was all ready at the same time. Served the rissoles with a dollop of sour cream, perfection!

  • Tried these for tea tonight

    Tried these for tea tonight and did just about everything I could to get it wrong.  Forgot to allow the 30 minute fridge time and then had the salt container lid fall off While I was shaking into the bowl. Despite both these things they worked really well.  I will add some more herbs, garlic and maybe even chilli for my "flavour" fiends next time. Used hot tap water in the bowl to start the steaming prices, so didn't actually need the last 5 minutes.  Thanks for the recipe.

    Good recipe. But mine needed more seasoning and because there were so many veggies the rissoles took much longer to cook. Might be better to cook rissoles and veggies separatley.
