Tikka Chicken with Quinoa Chickpea and pumpkin Salad

Ingredients

2 portion(s)

Salad

  • 30 grams Tikka paste, From Indian Cookbok
  • 200 grams chicken breast
  • Handful toasted pinenuts
  • 750 grams water
  • 1 tablespoon stock paste
  • 85 grams white quinoa
  • 1/2 butternut pumpkin, chopped into cubes
  • 400 grams tinned chickpeas , rinsed and drained, (I only used half the tin)
  • 1/2 Lebanese cucumber, diced
  • 1/2 punnet cherry tomatoes, chopped in half
  • 1/4 red onion, diced
  • 2 tablespoon Raisins (or sultanas), diced
  • sour cream, to serve ontop
  • fresh coriander, to serve ontop

Recipe's preparation

  1. Coat Chicken in Tikka paste, leave in fridge overnight or as long as possible.


    Put chicken on bottom Varoma tray and pumpkin on top Varoma tray


    Add water and stock to bowl. Insert basket with rinsed quinoa,put Varoma ontop of lid and cook on varoma 20-25 mins sp 2


    Remove quinoa,Check chicken and pumpkin is cooked, if not continue another 5-10mins until cooked through


    When above is cooked, add quinoa and pumpkin to salad bowl with remaining ingredients. 


    Serve warm with chicken ontop. a dollop of sour cream and coriander!!

    Loved this dish!! I only had tandoori paste on hand but was delish! Will definitely make this again. It served 4 adults but would prob do more chicken next time.

    Awesome recipe thank you! I cooked twice as much quinoa, chicken & pumpkin, used (tenderloins) and the recipe was delicious. Substituted sultanas for craisins; pine nuts for pistachios; added baby spinach to the salad and there was oodles for dinner and leftovers for lunches. 

    Definitely recommend.

    This was soooo good! I used two whole chicken fillets, more pumpkin and the entire can of chickpeas and this fed 3 adults and two kids. Nothing left on the plate. I will Be making this again. Yum!

    Love it! I love how you make it all in the one go with the varoma on top and the quinoa in the basket. I will so make this for the next bbq or function instead of a standard salad. 

    Are you sure it just makes 2 portions though? I've been eating from it the 3rd time in a row now and still have enough for lunch tomorrow! And I'm already looking forward to it again! 

    Didn't have coriander but used parsley which went well together too. And it's easily adaptable too (no chickpeas, other beans etc depending on what is left in the fridge).
