- 400 grams Fresh or Tinned Tomatoes
- 1 tablespoon brown sugar
- 2 tablespoon fish sauce
- handful fresh coriander or basil leaves, chopped

Recipe's preparation
Add onion, garlic and ginger to TM bowl. Chop for 5 secs/speed 7.
Add olive oil and saute for 2 mins/100 degrees/speed soft"Gentle stir setting" .
Add red curry paste, tomato paste and cubed chicken and cook for 2 mins/100 degrees/reverse"Counter-clockwise operation" /speed soft"Gentle stir setting" .
Add coconut milk/cream and cook for 10 mins/100 degrees/reverse"Counter-clockwise operation" /speed soft"Gentle stir setting" .
Add tomatoes, brown sugar, fish sauce and fresh herbs and cook for a further 5 mins/100 degrees/reverse"Counter-clockwise operation" /speed soft"Gentle stir setting" .

Tip
Serve with jasmine rice to absorb the excess juice. Garnish with extra coriander or basil leaves.
The kids love this recipe as it's quite mild.

I added some stir fry vegetables to the dish to bulk it out a bit. Next time I will add more red curry paste and may maybe a couple of chillis as we like it spicier
After reading other comments I decided to add just 200ml of coconut cream which was just right I think

I followed comments and used 2 tablespoons of tomato paste and curry paste. i didn't have ginger so used 1/8 teaspoon of ginger powder. Will use fresh ginger next time. This is a delicious recipe and kids loved it.

Very tasty, but yes, too much liquid. I will halve coconut milk next time. I added some capsicum too. I also used the butterfly so the chicken wouldn't shred and it was perfect. Will make again.

Very delicious!!! I did tweak it a little bit:
I added sliced red capsicum and bamboo shoots to the curry, didn't add as much coconut milk, added two tablespoons of red curry paste. I then put it in the thermoserver and cooked my rice (brown) and steamed some broccoli and carrot in the Veroma.
We will definitely be eating this again!

Yummy! I reduced the liquid after reading the reviews, still lots of liquid...maybe some cornflour would thicken it up? Nothing a few naan couldn't soak up!

Great recipe & flavours. I did tweak it a little myself after reading the comments:
Coconut Cream - I used a 270ml tin
Tinned tomatoes - I took out about a quarter of the juice from the 410gm can. (Are some people using crushed? There's more liquid in crushed than a tine of whole tomatoes I've found )
Tomato Paste - I used 2 tablespoons
Curry Paste - I used 2 tablespoons
My hubby LOVED this & I've printed it out to add to my permanent list! A really quick & easy recipe for a mid week meal.

It was very yummy but I agree WAY TOO MUCH liquid. Based on what others wrote I only used a 270ml of coconut cream (which was plenty) and there was still too much liquid. Next time will still add 270ml of coconut cream, but I might halve the tomato quantity or alternatively, leave the tomato quanitity as is but add some veggies... carrots, broccolini, etc... to absorb and cook in some of the liquid. I also cooked it for 5mins less than stated (Someone else said their chicken was overcooked). This was the perfect time as the chicken was tender and delicious. Thank you for sharing your recipe!

I only used 270ml coconut milk and 200g tomatoes with 2 Tbls red curry paste, still too much liquid I also used thigh cut into large pieces. Flavour delicious will definitely make this again.

My chicken breast meat was
My chicken breast meat was overlooked and there was way too much watery gravy. I would probably use chicken thigh next time and reduce the coconut milk and tomatoes by half. Otherwise really good flavours.

I made this last night and it was very nice. I added a bit extra curry paste and reduced the liquid quantities (all thermomix recipes seem to have so much juice?). My husband gave it 8/10.We've had a few thermomix disasters so it was great to turn out flavoursome meal!

My husband loved this, however said it was more of a laksa than a curry.
Well, I tried this tonight.
Well, I tried this tonight. Added extra big teaspoon of crushed chilli from the jar. Also vert generous with the garlic and ginger. added palm sugar instead of brown sugar, and added it with the coconut milk so that it would disolve. Coconut milk was fine as it still turned out qute thick. I also used about two handfuls of thai basil as the herb as my corriander is not quite ready. I added extra thai basil as a garnish and sliced green chilli to mine. The boys (8 and 6) loved it and both gave it 5/5. I also added tofu at the tinned tomato page. I could easily have doubled the chicken amount and will next time.
