Banana Protein Pancakes
- 100 grams rolled oats
- 3 bananas
- 4 eggs
- 1.5 tbsp Chia Seeds.
- 0.5 - 2 tbsp Honey or other sweetener (to taste)
- 1 tbsp coconut oil
- Rice Malt Syrup, to serve

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place rolled oats in "Closed lid" and mill 15 Secs/Sp 10.
Add bananas (broken in half), eggs, chia seeds and honey. Mix 25 Secs/Sp 5.
Heat coconut oil in hot frypan. Pour mixture into pan (can also make pikelets instead of pancakes). Once a couple of bubbles appear on top, flip over.
Once cooked, place on a plate and cover with a teatowel to keep warm while you cook the rest.
Serve topped with a scoop of natural yoghurt and a drizzle of rice malt syrup.

Tip
Can be served with things other than yoghurt and rice malt syrup. Try: berries (strawberries, blueberries etc), cinnamon, maple syrup, cream (or icecream), chopped walnuts.
Cook pikelet size and serve for morning tea, afternoon tea or pack in lunch boxes and take on picnics.

Swapped out oats for a mix of wholemeal plain and SR flour (70g/30g) and added a scoop of vanilla protein powder. Turned out great, delicious and healthy, thanks for the recipe!

Really yummy and easy - we didn't need the honey - the bananas made the mixture sweet enough, particarly if you are going to put a honey or syrup topping on them. Everyone from hubby to Granddaughter loved them.

Easy quick recipe when you don't have much in the cupboard and you're looking for a healthy sweet. I accidentally used only one banana and it was fine (although it was large). I think two bananas would be sufficient.
