Prawn Curry

  • 1 large onion, peeled and quartered
  • 2 cloves garlic, peeled
  • 1 teaspoon sweet paprika, ground
  • 1/2 teaspoon turmeric powder
  • 3 large red chillies
  • 2 tablespoon oil, (I use olive oil)
  • 200 grams cream
  • 1000 grams Prawns, peeled and deveined
  • 2 teaspoons Soft brown sugar
  • 400 grams rice

Recipe's preparation

    Rice
  1. Cook rice as per directions in Everyday Cooking recipe book.

     

    Whilst rice is cooking, peel and devein your prawns. I use 6 prawns per person but you can do more if you want.

     

    Once rice is cooked put it in the Thermoserver to keep warm.

  2. Sauce
  3. Empty out the water left in the bowl from cooking the rice, and rinse and dry the bowl. (It doesn't matter if its not completely clean/dry).

     

    Place onion, garlic, paprika, turmeric and chillies in the bowl. Chop for 5 seconds on speed 7. Use spatula to push mixture down sides of bowl. Chop for another 5 seconds on speed 7.

     

    Add the oil and saute for 3 minutes on Varoma temperature on speed 1.

     

    Add the cream to the bowl and cook for 3 minutes at 100 degrees on speed 1.

     

    Add prawns and sugar to the bowl. Cook for 5 minutes at 90 degrees on speed soft + reverse.

     

    Place rice in bowls and serve sauce over the top.

Tip

This is one of my favourite recipes that I have tried to convert to the Thermomix. I was worried that the prawns would get mashed up but they come out relatively unscathed. If you were worried about this you could try using the butterfly when cooking the prawns, instead of speed soft + reverse. I haven't tried this myself yet.

You could also use fish (cut into small pieces) instead of prawns, and we have used crayfish before too. You would just need to check that your seafood was cooked all the way through after the 5 minutes of cooking though - some seafood may take longer/less, but 5 minutes is plenty for prawns.
