Black Bean Chilli

Ingredients

  • 2 red capsicums, diced
  • 2 sprigs fresh thyme
  • 200 grams potatoes chopped into 1cm pieces
  • 2 dried chipottle chilli
  • 200 grams cooked black beans
  • 2 heaped tablespoons wakame seaweed
  • 1 tablespoon vegetable stock
  • 100 grams water
  • 1 onion, peeled and cut in half
  • 2 heaped tablespoons coconut oil
  • 400 gram Tinned tomatoes
  • 1 stick celery
  • 4 cloves garlic

Recipe's preparation

    Black bean Chilli
  1. Add onions, garlic and chipotle chilli to TM bowl. Chop 3 seconds /speed 7.

    Add coconut oil, Saute 3 mins/ Varoma/ speed 2.

    Add the capsicum, potatoes and tomatoes cook 5 minutes/ varoma /speed 2.

    Add the thyme, beans, wakame and vegetable stock and water to the tm bowl Cook 45 mins /100 degrees /Counter-clockwise operation speed 1.

Tip

Serve with Avocado Sour cream recipe on the community and Quirky Cookings spelt tortillas.

The Chipotle Chillis really make this dish so if you dont have any I would really recommend using a very smoky paprika or other strong dried chilli or pepper.

    Loved this. Even my bean hating husband enjoyed it. Was lovely served in a jacket potato with cheese spring onions and sour cream.
    I also swapped chipotle chilli for smoked paprika and a dash of chilli powder, it was mild but good for kids. I omited the seaweed and added corriander. I also swapped potato for sweet potato tmrc_emoticons.) YUM

    Tasted great with my variations! Due to not having some ingredients  tmrc_emoticons.;)

    I swapped out the chipotles with smoky paprika and didn't have any seaweed so left it out and I added a bunch of chopped coriander and swapped out half potato for sweet potato also.

    I think you can play around with the recipe and its very versatile and tasty no matter what!
