Coconut chickpea curry

Ingredients

4 portion(s)

  • 1 onion, Peeled and into 1/4s
  • 1 clove garlic
  • 1 piece ginger, I/2 thumb size, peeled and sliced into rings
  • 1 red chilli, Or to taste. roughly chopped.
  • 20 grams oil, of your choice
  • 1/2 teaspoon tumeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin ground
  • 1 teaspoon Corriander powder
  • 400 grams pumpkin, Peeled and diced to app. 1cm pieces
  • 400g can chickpeas, rinsed, drained
  • 50 grams Snow peas (whole), Washed
  • 160g coconut milk
  • 100 grams Spinach Leaves, Washed
  • 1 lime, Cut into 1/4s
  • Steamed Rice, To serve
  • Salt & pepper to taste

Recipe's preparation

  1. Place onion, garlic, chilli and ginger in Closed lid.

    Chop at sp.5 for 5 seconds. Scrape bowl and blitz again 3 seconds, sp. 5.

    Add oil, spices and pumpkin.

    Set TMX to Varoma, speed 1 Counter-clockwise operation, for 4 minutes.

    Add chickpeas and coconut milk.

    Set TMX to 100, 20 minutes, sp.1 Counter-clockwise operation.

    Add snow peas  and spinach.

    Stir through by hand using spatula.

    Season to taste.

    Tip into a Thermoserver, and prepare rice.

    Serve with lime wedges.

Tip

I used sugar snap peas as I didn't have snow peas.

i also used rocket as I didn't have spinach.

    Great base recipe! Thank you. As with most Thermomix recipes ... I adapted it to suit my personal tastes. I used half carrots and half pumpkin. Also added some frozen peas. Next time I'd probably add some TM stock paste as I like lots of salt - again, a personal preference. I'll definitely be making this again.

    I doubled the juice part and added prawns, served with rice, papadams and naan. Also took suggestion above and added fresh coriander. Delicious.

    Next time, I will add more chilli, 'twas a bit on the mild side,for,our palate.

    Thanks for this recipe. When I started making it I realised I had run out of can chick peas so used a 4 bean mix. It was still lovely, next time I will make sure I have all the ingredients

    Great, tasty, economical recipe.  After chopping garlic, ginger and onion, I set this aside, didnt clean out the bowl, then cooked rice in the basket which I held in the Thermoserver, whilst preparing the rest of the recipe. That got those flavours into the rice too, yum.
