  • 1 tablespoons olive oil
  • 1 brown onion
  • 1 zucchini
  • 2 cloves garlic
  • 1 tsp chilli flakes, dried
  • 2 tablespoons tomato paste
  • 400 g canned tomatoes
  • 400 g four bean mix, rinsed & drained
  • 420 grams canned sweet corn kernels, Rinsed & drained
  • 1 tbsp lemon juice
  • 2 tablespoons fresh coriander
  • 200 grams Corn tortilla, 8 x 25g
  • 120 g rocket
  • 4 tablespoons Salsa, Store-bought
  • 1 avocado
  • 4 tablespoons sour cream, light

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Corn & Bean Burritos
  1. 1. Add onion, zucchini & garlic to Closed lid. Chop for 3mins/speed 5.
    2. Add olive oil & chill. Cook 6mins/100deg/speed 2.
    3. Add tomato paste, tomatoes, beans & corn. Cook 15mins/100deg/speed 2 Counter-clockwise operation
    4. Stir in lime juice.
    5. Heat tortillas and top with rocket & bean mix. Fold over.
    6. Top with salsa, avocado & sour cream to serve.
