Green Mac n Cheese

Ingredients

8 portion(s)

  • 2 cups of grated cheese, (grate cheese in TM 10secs/Sp7)
  • salt and pepper to taste
  • 1 clove garlic
  • half leek (white part)
  • 1 small zucchini, roughly chopped, (skin on)
  • 80g butter (chopped)
  • 1 litre milk
  • 100g plain flour
  • 300g pasta spirals

Recipe's preparation

  1. Cook your pasta and keep warm in Thermoserver whilst preparing the cheese sauce.

     

    In a dry TM bowl, grate approx 200g of cubed cheese for 10secs on Speed 7 then set aside (to be added at the end of cooking)

     

    No need to wash TM bowl.

    Add chopped leek and blitz 4secs on Speed 7.

    Add cubed butter, salt/pepper and saute 3mins/100degs/Speed 1.

    Add peeled garlic clove and chopped zucchini and blitz 10secs/Speed 7.

    Cook 10mins/100degs/Speed 1.

    Blend 2mins/Speed 7.

    Add milk, flour and cook 12mins/90degs/Speed 4.

    Add grated cheese and blend 20secs/Speed 4.

     

    Pour cheese sauce over cooked pasta of your choice.  Garnish with your favourite fresh herb (parsley is best), sprinkle of cheese, slice of tomato, etc, etc.

Tip

You can choose to peel the zucchini in case it's "too green" for little kiddies tmrc_emoticons.)

    This was delicious. At the zucchini stage I also added a bunch of wilted spinach and a handful each of parsley and basil. Needless to say verrrry green sauce. We garnished with bacon and semi-sun dried tomatoes. My two year old loved it.
