Ingredients

Ratatouille

  • 1 medium onion, Peeled and sliced
  • 2 cloves garlic
  • 75 grams Olive oil (or preferred oil)
  • 3-4 sprigs fresh oregano leaves, (or 1 teaspoon of dried)
  • 3 stalks fresh basil leaves, (or 1 teaspoon of dried)
  • ¼ red capsicum, Sliced into strips
  • ¼ yellow capsicum, Sliced into strips
  • 1/4 --- green capsicum, Sliced into strips
  • ½ cans diced tomatoes
  • 1 tomato, Cut into chunks
  • 1 tablespoon tomato paste
  • 1 tablespoons Vegetable stock paste
  • ½ teaspoon Himalayan Salt (or other salt)
  • 1 medium zucchini, Cut In chunks or rounds
  • 1 some balsamic vinegar

Recipe's preparation

  1. Add onions, garlic and herbs and about 40g oil to bowl



    Cook for 6 minutes / 100° /Speed Counter-clockwise operationGentle stir setting



    Add tomato chunks, capsicum slices, canned tomatoes, salt, stock, & tomato paste



    Cook for 8 minutes / 100° / Speed Counter-clockwise operationGentle stir setting



    Add zucchini

    Cook for 10 minutes / 100° / SpeedCounter-clockwise operationGentle stir setting

    Test for taste and add a splash of balsamic and pepper. Add some cayenne and/or turmeric if you like to pump it up a bit.
