Raw zucchini noodles with olives and chunky pesto

Ingredients

2 portion(s)

Zucchini noodles..

  • 2 zucchinis (use 1.5 if large), cut into noodle strips
  • 1 clove garlic
  • 4 sprigs basil, leaves only
  • 4 sprigs parsley, leaves only
  • 20 g lemon juice
  • 40 g raw macadamia nuts
  • 30 g olive oil
  • 1 pinch salt
  • 12 Kalamata Olives, cut in half

Recipe's preparation

  1. 1.  Cut zucchini into noodles or use a mandoline or slicer.  Divide   between 2 bowls

     

    2.  Chop garlic. 3 sec sp 7-scrape down side of bowl

     

    3.  Add all reamining ingredients to bowl apart from olives. chop 10 sec sp 5-scrape down side of bowl and repeat process for 5 sec.

     

    4.  Place pesto ontop of noodles, mix gently with spatula to combine

     

    5.  Cut kalamata olives in half and place ontop of zucchini and pesto

    Great meal and easy to prepare. I've also used coconut oil instead of olive oil and add cracked pepper at the end.

  • Followed the recipe pretty

    Followed the recipe pretty much as is except added the olives in step 3 rather than serving them on top of the zucchini noodles at the end. Forgot about the lemon juice by accident but still a really lovely, light meal. Will add it next time. The garlic was quite strong as it wasn't cooked but it didn't bother me. I also sautéed the zucchini noodles lightly with a teaspoon of olive oil in the frypan rather than serving them raw.
