Spinach and Olive Tart

Ingredients

Shortcrust Pastry from Everyday Cookbook

Tart Filling

  • 20 g olive oil
  • 1 red onion
  • 200 g Baby Spinach Leaves
  • 200 g pitted kalamata olives
  • 125 g cream cheese
  • 4 eggs
  • 100 g cream
  • salt, To Taste
  • pepper, To Taste
  • 2 tablespoons pine nuts

Recipe's preparation

    Pastry
  1. Roll out pastry to 2mm thickness. Press into the base of a lightly greased 26cm fluted tart pan with removable base.

    Trim to fit. Prick well with a fork and bake in a hot oven 200 degrees celcius for 8-10mins until lightly golden.

    Allow to cool.

  2. Tart Filling
  3. Finely slice the onion.

    Add oil and onion to Thermomix bowl.

    Cook for 5 minutes/100 degrees/Counter-clockwise operation/speed 1

    Add spinach and olives to the bowl.

    Cook for 3 minutes/100 degrees/Counter-clockwise operation/speed 1

    No need to wash bowl.

    Spoon spinach mixture over the base of the cooled pastry and scatter over the cream cheese pieces on top.

    Add eggs, cream, salt & pepper to bowl.

    Blend for 5 seconds on speed 5.

    Pour egg mixture over the spinach mixture and top with pine nuts.

    Bake in a moderately slow oven 160 degrees celcius for 20 - 30 minutes until set.

    Remove from pan, slice and serve with salad.

Tip

You could also make many smaller individual tarts with this recipe, great for canapes!

    This is absolutely delicious. I've made it 4 times and love it. It's a great light lunch too if having guests over.
    I added mushrooms and some shredded ham too.

    Delicious pie, great for using up some leftover cream cheese. I added ricotta instead of the cream and it turned out well. Kalamata olives were a great addition and gave it a nice flavour. My toddler loved this. Will make again!

    This was delicious and very easy to make.  I didn't have kalamata olives at the time so just used green stuffed ones and it still turned out delicious!  Big Smile
