Sweet potato, pea and corn fritters

  • 500 g sweet potato, Washed, peeled and chopped roughly
  • 200 g frozen corn kernels
  • 200 g frozen peas
  • 75 g feta cheese, Broken into pieces
  • 150 g self-raising flour, GF if required
  • 2 eggs, Or egg replacer
  • 2 Spring/green onions, Finely sliced
  • 1/2 tsp salt, To taste
  • dash pepper, To taste

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Recipe's preparation

    How to:
  1. 1. Blitz the sweet potato 5secs/sp5

    2. Add the feta, green onion, frozen veggies, flour and eggs and combine 20secs/sp3/Counter-clockwise operation. You may need your spatula to help.

    3. Fry each side in oil in a frypan until golden and cooked.

    4. Drain on a paper towel lined plate.

    5. Serve with a dollop of sour cream/yogurt, a dash of sweet chilli sauce and a crisp side salad (if age/ diet appropriate).

    Large volume of mix was a little difficult to manage in the thermomix. Mixture didn't hold together well. Tasted OK although quite bland.

    I was really dubious when I'd made the mixture, imagined it wouldn't cook properly and be like eating raw potato, but they were great, really tasty. I used a 400g tin of corn kernels and frozen peas. Will definitely make again.

    Looks good! What could I use instead of feta cheese? And I plan to use tinned corn and tinned peas, hopefully they wont be too mushy
