Vegan green curry

Ingredients

Curry paste

  • 80 g macadamia nuts
  • 2 cm fresh ginger
  • 2 Chillies
  • 4 cloves garlic
  • 2 spring onions
  • 3 leaves Keffir lime leaves
  • 1 stick lemongrass
  • 20 g coconut oil

Curry sauce

  • 270 g coconut cream
  • 230 g water
  • 1 teaspoon vegie stock
  • 3 tbsp soy sauce
  • 1 tbsp Rice malt syrup
  • 300 g Mixed vegies, Green beans, snow peas, carrots
  • 1 can bamboo shoots, Drained
  • 1 bunch bok choy, Chopped

Optional garnish

  • lime juice
  • soy sauce
  • coriander
  • bean sprouts
  • fresh chilli

Cauliflower rice

  • 600 g cauliflower, Cut into florets

Fried tofu

  • 500 g Tofu, Cubed, fried

Recipe's preparation







        1. Place macadamia nuts in bowl and mill for 5 seconds speed 9, set aside.





          Without rinsing bowl, place cauliflower florets in bowl chop for 5 seconds, speed 5, reverse, place in varoma dish leaving a small hole in the middle. Chop bok choy and place on top layer of varoma.












        1. Without rinsing the bowl place all curry paste ingredients (excluding coconut oil and nuts) in the bowl and chop 7 seconds speed 8.





          Add coconut oil and cook 4 minutes, varoma, speed 1.





          Add coconut cream, water and stock and cook 5 minutes, varoma, speed 1.





          Slowly increase from speed 5 blend for 30 seconds on speed 9.





          Place varoma with cauliflower rice and bok choy on top and cook for 8 minutes, varoma, speed softGentle stir setting





          Add soy sauce, rice malt syrup, veggies, bamboo shoots and cook for 4 minutes, varoma, reverse, speed softGentle stir setting





          Place in Thermoserver and stir in nuts and fried tofu.
          Serve with cauliflower rice and bok choy.



























        1. Garnish according to taste with optional ingredients.

Tip

For nut free option use sunflower seeds.
Store keffir lime leaves, lemongrass and chillies in freezer.
