Vegetables in saffron, chilli & coconut broth

  • 1 tbsp canola or sunflower oil
  • 1 brown onion
  • 1 garlic clove
  • 1 cm ginger
  • 1 red chilli
  • 1/2 tsp Ground Coriander
  • 1 pinches saffron threads
  • 250 g light coconut milk
  • 2 tsp fish sauce
  • 500 g butternut pumkin, cut into 2cm cubes
  • 400 g potatoes, cut into 2cm cubes
  • 1 red capsicum, cut into 2cm pieces
  • 200 g green beans, cut into 2cm pieces
  • 125 g fresh coriander leaves

Recipe's preparation

  1. 1. Chop onion, garlic, ginger & chilli 3sec/speed 5.
    2. Add oil, ground coriander & saffron - saute 4sec/100deg/speed 1.
    3. Add coconut mik, fish sauce - heat 30sec/100deg/speed 1.
    4. Add pumpkin & potato - cook 8min/100deg/reverse speed 1.
    5. Add capsicum & beans - cook 5min/100deg/reverse speed 1.
    6. Add coriander leaves & serve.
