So I’ve made this a few times although tonight I went to make it and had no polenta so I substituted it with cous cous which I blitzed a bit first because I wasn’t sure how it would cook. Anyway it was totally yum. This will be my new take on this recipe.

So yummy, thanks Stacey! For a non vegetarian, adding the polenta made a massif difference. I just love polenta!

  • Worked well, I hadn't made

    Submitted by Tasmum on 21. June 2016 - 06:41.

Worked well, I hadn't made zucchini slice with polenta before but it is yummy and gives it more flavor than the  'eggy' flavour that usually dominates. Thanks heaps
