  • 65 g Tasty cheese, Diced
  • 180 g pumpkin, Diced
  • 60 g zucchini, Roughly chopped
  • 2 eggs
  • 1/4 red onion
  • 20 g corn kernels, frozen
  • 65 g wholemeal flour
  • salt, To taste
  • pepper, ground, To taste
  • olive oil, To fry

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Fritters
  1. Weigh diced tasty cheese into TM bowl. Grate for 10 seconds/ sp 7. Set cheese aside.
  2. Place diced pumpkin into TM bowl. Grate 5 seconds / sp 7. Set pumpkin aside
  3. Add zucchini to TM bowl. Grate 5 seconds / sp 7. Set aside into a sieve. Squeeze out excess liquid using a spatula (press down on zucchini).
  4. Add red onion to TM bowl. Grate 5 seconds / sp 7. Scrape down and repeat if necessary. Set aside.
  5. Crack eggs into TM bowl and whisk them for 3 seconds / sp 6.
  6. Add cheese, pumpkin, drained zucchini, red onion, flour, frozen corn and salt & pepper into TM bowl. Mix for 10 seconds / sp 4. Form into fritters.
  7. Heat olive oil in frying pan oven medium heat. Add fritters and cook for 5mins each side, or until golden and crisp.
  8. Once cooked, set aside and serve with cos lettuce and sliced radish. Add a side of mayonnaise (optional). Enjoy!
