Women's Weekly Zucchini Slice

Ingredients

Zucchini Slice

  • 375 g zucchini, roughly chopped
  • 1 onion, halved
  • 3 slices bacon, optional (omit to make it vegetarian)
  • 115 gram Cheddar cheese (1 cup), grated
  • 135 g self-raising flour
  • 60 g oil, EVOO is ok
  • 5 eggs, pref free range
  • salt & pepper, to taste

Recipe's preparation

    Easy zucchini slice
  1. -Prepare a well greased lamington tin (16cm x 26 cm) or any other square or rectangular tin. Set aside.

    -Add cheese into mixing bowl. Grate cheddar chesse speed 5 for 5-7 secs.  Transfer into a bowl and set aside.

  2. -Add onion (and bacon if using) and chop speed 5, 3-4 secs. Scrape down.

  3. -Add roughly chopped zucchini into mixing bowl and chop speed 5 for 5 secs.  Scrape down.  

  4. -Add cheese, flour, oil and eggs.  Season with salt and pepper.  Mix speed 5, Counter-clockwise operation for 5 secs.  

    -Pour into prepared tin or dish.

    -Bake at 180 celcius for 30 to 40 minutes.
