Variation Bacon and sweet potato risotto
- 1 sweet potato, cut into 1cm cubes
- olive oil
- 125 grams parmesan, cut into 1 cm cubes
- 1 bunch parsley, leaves only
- 3 green onions
- 2 clove garlic, peeled
- 100 grams hickory smoked bacon, rind removed
- 500 grams water
- 230 grams arborio rice
- 2 tablespoons Concentrated vegetable
- 3 tablespoons Crispy cooked bacon, Crumbled

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- 1. Preheat oven to 180 degrees.
2. Spread sweet potato on a tray, drizzle with olive oil and bake for 20minutes (or until tender). Set aside.
3. Add parmesan cheese to the bowl - 10secs/sp9. Set aside.
*Bellini users switch to blunt blade here*
4. Add onion and parsley to the bowl - 5secs/sp5.
5. Add bacon to the bowl - 3secs/sp7.
6. Add 2 TBS of butter - 3mins/100deg/sp1 "Counter-clockwise operation" (MC off)
7. Insert butterfly. Add 1 TBS of butter and rice - 3mins/100deg/sp1 "Counter-clockwise operation" (MC off)
8. Add stock and water - 15 mins/100deg/"Counter-clockwise operation" Sp1 (MC on)
9. Put the risotto into a thermoserver or similar at the end of the cooking time. Add the sweet potato and parmesan and stir through.
10. Sprinkle crispy bacon bits and a bit of parsley to garnish when you serve.

Tip
Cooking times are for the Bellini Intelli. Thermomix users may need to adjust the cooking time.
Bellini users should just use speed 1 and a blunt blade where it says 'reverse'.

Melinda Hutchison: Melinda, I’ve found that to be an issue with Risotto recipes. Depending on brand or style, it may require a bit of extra liquid or time. I’ve generally now started adding an extra two minutes on the risotto cooking cycle to make sure it gets cooked enough.

dwtl1710:Oh I'm so sorry, looks like I had accidentally deleted the arborio rice ingredient from the list. I just added it. It should be 230 g of rice. I'm sorry I did not see this sooner. The system did not tell me there was a question/message. Hope you enjoy!
