Cauliflower, Chicken & Mushroom Fettucine

Ingredients

Sauce

  • 50 grams Parmesan cheese
  • 1 cauliflower
  • 4 chicken thighs, sliced
  • 150 grams mushrooms, halved
  • 1 brown onion
  • 2 cloves garlic
  • 2 level teaspoons chicken or veg stock paste
  • 225 grams Fettucine

Recipe's preparation

  1. Chop parmesan cheese 5 seconds, speed 7.  Set aside.


    Put 1 litre water in jug, chicken slices and mushrooms in bottom of varoma, and cauliflower florets in top.


    Steam 20 mins, varoma temp, speed 2.  Meanwhile cook the fettucine in a pot of boiling water for recommended time, and place in preheated thermoserver.


    Reserve half the cooked cauliflower for later, place rest of cauliflower, chicken and mushrooms in thermoserver, with the cooked fettucine.


    Reserve 500g of the cooking water for later.  Dont clean the jug.


    Chop onion and garlic speed 3 for 3 seconds.  Add a good splash of olive oil and cook 3 mins, 100, speed 1


    Add the reserved cooking water, the reserved cauliflower, stock paste and grated cheese.  Blend for 30 seconds, gradually increasing speed to 8.


    Heat sauce for 2 mins, 100, speed 1.


    Pour over fettucine mix in thermoserver, toss to serve
